Sugared Butterscotch Ginger Snaps

THERE’S LOTS OF SNAP IN THESE EASY TO MAKE GINGER SNAPS   Bring gourmet into your home kitchen without the extra costs of the bakery. I’ve taken an old-fashioned Ginger Snaps recipe to the next level and created a cookie (biscuit) that no one has ever tasted before. Let’s be realistic here for a moment because I know many of you might be scratching your heads wondering why and how on earth I’ve made Butterscotch Ginger Snaps. Although traditional baking holds a place in my heart I find the only way to create new recipes is to experiment. This might mean you fail at some of your test recipes but other times like this, they turn out magnificent.   Old Fashioned-Ginger Snaps   Before we get into my Butterscotch Ginger Snaps recipe for those of you not familiar with the Ginger Snap think crunch. If you’re craving a spiced cookie with a crunchy, chewy texture this is the cookie recipe that you want to make. What are Ginger Snaps? Homemade Chocolate Bars with Stevia (Sugar-Free, Low-Carb)

CHOCOLATE CANDY BARS ARE INEXPENSIVE TO MAKE AT HOME WITH THE ADDED BONUS OF INCLUDING YOUR FAVOURITE INGREDIENTS   I’m the kind of guy who doesn’t mind making homemade gifts for the people I love. So, I decided to make homemade low-carb chocolate bars as a surprise for Valentine’s Day to give to Mrs. CBB along with some not-so-crafty decorations that I’m sure she will laugh at. It’s the thought that counts, right? Homemade chocolate bars or other chocolate candies are not meant to look perfect because it is the imperfect that says, “I made this with Love” that matters most. What I love the best is the cost of making homemade chocolate bars vs. store-bought. Before we start this recipe for homemade sugar-free chocolate bars ….. I just want to point out that if you don’t care for sugar-free chocolate you can easily use regular chocolate chips  to make this recipe for homemade chocolate bars. Once you understand the basics of melting chocolate, own the proper tools and have the ingredients on-hand then you’ll be set to go.   Chocolate Bar Mould   To be honest if you don’t fancy the same chocolate bar mould that we use that […]

Deep-Dish Mexican Taco Pie (Keto, Low-Carb)

DEEP-DISH MEXICAN TACO PIE IS UNIQUE, FLAVOURFUL AND EXCEPTIONALLY EASY TO MAKE   Seriously, if you’ve been looking for Mexican food ideas I’ve got this amazing cheesy Taco Pie and it was a HUGE hit including Mrs. CBB who eats a keto diet. This taco pie is hearty and packs a punch for those nights you crave comfort food but without all the heavy carbohydrates. Make the nearest taco place be your kitchen because creating Mexican food is far tastier and less expensive than if you made a run for the border. Mexican food lovers in Canada all know what fast-food restaurant I’m TACO’ing about! These days Mexican style franchises are popping up all over Ontario from Mucho Burrito to Quesada Buritos and Tacos to authentic mom and pop kitchens. Mexican restaurants are popular because they are full-flavoured and typical of a meal prepared at home such as tacos, burritos, rice dishes, chicken dishes, nachos etc. The other reason is Mexican food is far different from your typical burger and fries joint. Chai Spiced Pear Scones with Toasted Almonds

SNUGGLE UP TO THESE CHAI SPICED PEAR SCONES WITH A CUP OF HOT TEA   Chai spices scream winter and combined with pears you’ve got yourself a winning combination which is what inspired these gorgeous Chai Spice Pear Scones topped with toasted almonds. I decided to keep these Chai spiced pear scones plain and simple without any other added sugary glaze or icing on top of them. I didn’t want to turn them into a cake type dessert so going with simple pears scones was the direction I took especially since I’ve cut back on my sugar intake the past two years. These pear scones are wonderful when you want to relax with a hot cup of tea and enjoy a snack or I’ve even toasted them in the morning then topped them with butter. Other types of scones that I favourite are my Pumpkin Spiced Scones, British Scones with Blackberry Apple Jam and for Mrs. CBB she fancies the keto scone in a mug.   What to do with pears?   Pears are one of my favourite types of fruits but they must be ripe for me to enjoy the natural flavour. A hard pear has no flavour at […]

The Best Frosted Apple Cinnamon Rolls

A PLEASANT SURPRISE AWAITS YOU WITH THESE CINNAMON ROLLS WRAPPED IN WARM APPLES WITH A BLANKET OF GOLDEN ICING   It smells so good in here already don’t you think? Today’s Apple Cinnamon Rolls recipe is a family favourite around here during the Christmas holidays. What’s even better is when my sister-in-law said my apple cinnamon rolls are the best she has ever tasted and she is a pretty good baker herself! Compliments are always welcome. Birth of the Apple Cinnamon Rolls recipe   My apple cinnamon rolls started with a recipe that I found in a library cook book years ago and modified it to suit our family tastes. I remember the first time I made these apple cinnamon rolls because I had one lonely apple in the kitchen that needed using up. Sometimes good things come from just one inspiration such as an apple. Since apples and cinnamon are such a tasty pairing and quite common in many recipes, it seemed to be an easy step to add that one apple to my cinnamon rolls. A new family recipe was born, Apple Cinnamon Rolls! I have to admit some of the measurements are not very exact but I […]
