Chunky Monkey Chocolate Chip Banana Brownies

WE’RE GOING BANANAS BAKING CHOCOLATE CHIP BANANA BROWNIES!   All you’ll need to make these moist chunky monkey chocolate chip banana brownies are two beautifully ripe bananas. There always seems to be extra bananas in our house that have passed their perfectly ripe point which means we add it to our banana freezer stash. Most of you probably do the same, right? These chocolate chip banana brownies are a balanced blend of a cake-like fudgy brownie texture throughout the pan. To be honest these are the perfect sweet snack to make and they are inexpensive. They are comparable to banana bread bars loaded with chocolate chips but I’ve added a secret ingredient, Greek Yogurt. Bonus, if you’re a fan of peanut butter you can add some of that in to make a chocolate chip peanut butter banana sandwich brownie! Add in a swirl of strawberry jam and you’ve got one loaded brownie.   Eat Me or Leave Me   When it comes time to bake we know if bananas are in the recipe, we’ve got them so don’t toss them out thinking they are rotten. Food waste is a huge issue in Canada so finding ways to utilize foods the […]

Chai Spiced Pear Scones with Toasted Almonds

SNUGGLE UP TO THESE CHAI SPICED PEAR SCONES WITH A CUP OF HOT TEA   Chai spices scream winter and combined with pears you’ve got yourself a winning combination which is what inspired these gorgeous Chai Spice Pear Scones topped with toasted almonds. I decided to keep these Chai spiced pear scones plain and simple without any other added sugary glaze or icing on top of them. I didn’t want to turn them into a cake type dessert so going with simple pears scones was the direction I took especially since I’ve cut back on my sugar intake the past two years. These pear scones are wonderful when you want to relax with a hot cup of tea and enjoy a snack or I’ve even toasted them in the morning then topped them with butter. Other types of scones that I favourite are my Pumpkin Spiced Scones, British Scones with Blackberry Apple Jam and for Mrs. CBB she fancies the keto scone in a mug.   What to do with pears?   Pears are one of my favourite types of fruits but they must be ripe for me to enjoy the natural flavour. A hard pear has no flavour at […]

The Best Frosted Apple Cinnamon Rolls

A PLEASANT SURPRISE AWAITS YOU WITH THESE CINNAMON ROLLS WRAPPED IN WARM APPLES WITH A BLANKET OF GOLDEN ICING   It smells so good in here already don’t you think? Today’s Apple Cinnamon Rolls recipe is a family favourite around here during the Christmas holidays. What’s even better is when my sister-in-law said my apple cinnamon rolls are the best she has ever tasted and she is a pretty good baker herself! Compliments are always welcome. Birth of the Apple Cinnamon Rolls recipe   My apple cinnamon rolls started with a recipe that I found in a library cook book years ago and modified it to suit our family tastes. I remember the first time I made these apple cinnamon rolls because I had one lonely apple in the kitchen that needed using up. Sometimes good things come from just one inspiration such as an apple. Since apples and cinnamon are such a tasty pairing and quite common in many recipes, it seemed to be an easy step to add that one apple to my cinnamon rolls. A new family recipe was born, Apple Cinnamon Rolls! I have to admit some of the measurements are not very exact but I […]

Magical 4 Ingredient British Sponge Cake

The best sponge cake recipe you will ever try is made with love and only 4 ingredients.   The aroma of this British sponge cake recipe trailed my mum’s kitchen since I was a little boy. She was a stay-at-home mum for the most part unless she was helping my dad with our business and always had a cake baked inside her cake tin. (she still uses the same tin, no kidding.) Most often it was a sponge cake to enjoy after tea with a lovely cup of coffee or tea. Other times we’d sneak a piece just because the sponge cake was so light and fluffy it was hard to resist. A sponge cake is one of the easiest cakes you can make and a great cake for baking beginners and inexpensive to make. British sponge cake has 4 ingredients and that’s all you need to make this delicious cake that everyone will rave about. Once you dress up your fluffy sponge cake with accessories you’ll see that you’re working with a blank pallet that you can bring to life. This makes the sponge cake the perfect birthday, anniversary, baptism, graduation or even wedding cake for your special day. […]

A SIMPLE MOIST MUFFIN THAT YOU CAN MAKE IN LESS THAN 30-MINUTES.   When I bite into a muffin I expect it to be moist, flavourful and to not fall apart in my hands. These one-bowl flour-less peanut butter banana oatmeal chocolate chip muffins are the perfect breakfast muffin or ideal for a quick snack on the go. Our almost three year-old son absolutely loves Tim Horton’s chocolate chip muffins and knows the difference if we try to swap one out for something else. Living with a picky eater is tough especially when they are still learning to talk. I tried to pass off raisins the other day for chocolate chips and met with a disgusted look. I tried. Related: How to motivate picky eaters in your family I know it sounds like a mish-mash of ingredients but I don’t think I’ve ever seen our son demolish a muffin the way he does with these peanut butter banana oatmeal chocolate chips muffins. I’m pretty sure Mrs. CBB and I just watched him eat it because it’s not often we see him thrilled to eat something we make at home.
