Magical 4 Ingredient British Sponge Cake

The best sponge cake recipe you will ever try is made with love and only 4 ingredients.   The aroma of this British sponge cake recipe trailed my mum’s kitchen since I was a little boy. She was a stay-at-home mum for the most part unless she was helping my dad with our business and always had a cake baked inside her cake tin. (she still uses the same tin, no kidding.) Most often it was a sponge cake to enjoy after tea with a lovely cup of coffee or tea. Other times we’d sneak a piece just because the sponge cake was so light and fluffy it was hard to resist. A sponge cake is one of the easiest cakes you can make and a great cake for baking beginners and inexpensive to make. British sponge cake has 4 ingredients and that’s all you need to make this delicious cake that everyone will rave about. Once you dress up your fluffy sponge cake with accessories you’ll see that you’re working with a blank pallet that you can bring to life. This makes the sponge cake the perfect birthday, anniversary, baptism, graduation or even wedding cake for your special day. […]

Peanut Butter Banana Oatmeal Chocolate Chip Muffins (Flour-Less)

A SIMPLE MOIST MUFFIN THAT YOU CAN MAKE IN LESS THAN 30-MINUTES.   When I bite into a muffin I expect it to be moist, flavourful and to not fall apart in my hands. These one-bowl flour-less peanut butter banana oatmeal chocolate chip muffins are the perfect breakfast muffin or ideal for a quick snack on the go. Our almost three year-old son absolutely loves Tim Horton’s chocolate chip muffins and knows the difference if we try to swap one out for something else. Living with a picky eater is tough especially when they are still learning to talk. I tried to pass off raisins the other day for chocolate chips and met with a disgusted look. I tried. Related: How to motivate picky eaters in your family I know it sounds like a mish-mash of ingredients but I don’t think I’ve ever seen our son demolish a muffin the way he does with these peanut butter banana oatmeal chocolate chips muffins. I’m pretty sure Mrs. CBB and I just watched him eat it because it’s not often we see him thrilled to eat something we make at home. SPLASH YOUR EASTER TABLE WITH A CUPCAKE BOUQUET OF COLOURS.   Knock, Knock Cupcake delivery. Don’t make this be you because your wallet will feel the crunch. Gourmet cupcakes cost a fortune to buy from local bakeries but there’s no need to spend $2-$5 for one cupcake when you can easily make them at home for far less. For you last-minute Easter bakers out there put your apron on and get ready to bake some Easter cupcakes that everyone will think you bought from the local bakery. Easter Baking for toddlers doesn’t get any more colourful then these adorable multi-coloured Easter cupcakes. Mrs. CBB and I wanted to involve our son in baking these Easter cupcakes as a tradition for our family. Fun Easter desserts are also a perfect way to celebrate the beginning of Spring at home, work or for the kiddos. They will add more sweetness to the already chocolate-filled diet that most of us will have for the month of April. I can handle that though and so can our little guy although we have to limit his chocolate intake otherwise he would eat it day and night. Like father like son.   Baking takes creativity, a […]

Anginetti Italian Lemon Cookies with Coloured Sprinkles

ITALIAN LEMON COOKIES ARE ELEGANT FOR EASTER, CHRISTMAS, WEDDINGS AND FOR EVERYDAY EATING. THE PERFECT DUNKING COOKIE.   Soft Italian Lemon cookies with a lemon glaze and coloured sprinkles are a staple in just about every Italian family particularly those who hail from Southern Italy. Does dunking Italian Anginetti cookies in your morning coffee sound familiar? It probably does if you’re Italian but for those who haven’t you should try it. I promise you these cookies are one of the best Italian cookies to dunk and I’ve had many growing up in an Italian neighbourhood. With Easter (Pasqua-Italian) around the corner I thought you’d all like to try something a bit different for your Easter dessert or before, after and in-between meals. You can pretty much eat these Anginetti Italian lemon cookies all day (at least I can). In my teens I would visit my Italian friend almost daily to hang out and play or swoon over the boys. Her mother would always have these amazing iced Italian cookies  that I would drool over. It was like living in a palace and I was jealous because all I got were Oreos from a bag. These Italian cookies with sprinkles on […]

Swirled Nutella Banana Bread

THE SECRET TO MY POPULAR MOIST BANANA BREAD IS REVEALED TODAY. BE CAREFUL WHAT YOU DO WITH THIS SWEET INFORMATION.   In a perfect Nutella world we’d all love Nutella but for now you either love it or you hate it. I’m going to Nutella bomb your kitchen today with a Nutella banana bread recipe like you’ve never tasted before. Creating recipes with Nutella seems pretty easy and it is because chocolate practically goes with everything, especially bananas. I may be biased but this is one of the best and moist Swirled Nutella Banana Bread recipes that has a bit of ooey-gooey at the top. I promise you’ll either be licking your lips or your fingers when no one is looking or grabbing another piece to mask those sticky fingers.   Breakfast Nutella   All you need is a spoon…and maybe a slice of bread. Nutella has gotten a bad rap after consumer complaints about their nutritious breakfast advertising over the years but production is still going strong. Someone has to be buying it! This is chocolate folks and probably not the best breakfast but heck, everyone needs a little chocolate boost in the mornings some times. Years ago when […]

Winter White Chocolate Coconut Macaroons (Low Carb) (Sugar-Free)

INEXPENSIVE LOW CARB SWEETS TO HAVE ON HAND IN THE FREEZER.   Mrs.CBB and I were working on low carb baking ideas that we could make for the holidays when we decided to create one of my favourites, coconut macaroons. Many moons ago when Mrs. CBB was working at Tim Hortons she remembers making coconut macaroons and dipping them in milk chocolate. That was part of her role when she worked the night shift with the baker back when they used to make donuts, cookies and muffins fresh in the restaurant. Chocolate coconut macaroons were an everyday cookie on the popular coffee shop menu and were sweet, chewy and had a crunchy exterior. Mrs. CBB said it was also hard to resist just eating one. My challenge was to recreate coconut macaroons but a sugar-free and low carb version. When I lived in the UK I used to make the sweet version of coconut macaroons because they were delicious and inexpensive to make. I didn’t have fancy scoops though and would just roll them and pat them down but I like this version better. You can buy a bag of coconut in Canada for $1.00 which would be about 2 […]

Cranberry Orange Biscotti Dipped In White Chocolate Drizzled With Lemon Glaze

BAKING SHOULD BE FUN AND THAT’S WHAT YOU’LL HAVE WHEN YOU MAKE THESE TWICE-BAKED CRUNCHY BISCOTTI DRIZZLED WITH LEMON ICING.   I’m in the kitchen again getting ready to bake more Christmas cookies for gifts and friends who pass by for a visit over the holidays. It’s always nice to send company home with a little care package and I like to do that sometimes with baked goods I’ve made. The aroma in the air today will be from Cranberry Orange Biscotti dipped in white chocolate then finished with a drizzle of lemon icing. You’re already brewing the coffee aren’t you? Biscotti are Italian biscuits that are twice-baked so they are delicious and hard with a bit of chew. You enjoy biscotti along with coffee or tea whenever you get the urge for something sweet. When you’re visiting Italy you may learn that the Italians also enjoy their biscotti with sweet wine. I love the Christmas holidays and so does my family because it’s a time of year where we feel closer than ever before. The kids know that as soon as they come in from school something sweet will be baking in the oven. Once the smell hits their […]
