Ricotta Eggnotta Italian Style Deep-Dish Crustless Quiche

A DELICIOUS EGG RECIPE FILLED WITH PEAMEAL BACON, RICOTTA CHEESE AND CHIVES THAT WILL PLEASE ANY CROWD   The Ricotta Eggnotta Deep-Dish Crustless Quiche is like no other because it’s made in a spring-form pan which gives it lots of height and plenty of plate porn for your guests. When a dish looks and smells delicious you will find you end up with an empty plate almost every time. This is that dish. I’ve loved a good Quiche ever since I can remember and my mum mad them often but with a pastry crust that was flakey and buttery. What I wanted to do is break the crust and pie-slice size Quiche that is tradition and bring it to new heights. (no pun intended) ha! The second reason I wanted to make this deep-dish crustless quiche is because it is a low-carb, keto recipe that I created for the family so my wife can also enjoy it.   Melt that cheese chef   Just last week I watched a video online where a restaurant topped their nachos with fried melted cheese which gave me this crazy idea to do the same with my deep-dish crustless Quiche. The Ricotta Eggnotta is […]

Just look at the photo once again…yes, it is THAT GOOD!     Characteristics of an amazing meatloaf recipe   A meatloaf recipe has to be moist, flavourful and paired up with a nice homemade sauce or gravy. These days most people are looking to cut the carbs and opt for smarter choices such as vegetables, fruits and proteins. Do you ever just have one of those days where you come home and the last thing you want to do is cook a big meal? We have them often especially with an almost 3-year-old running around the house. Although we like to use our crock-pot to ease into a quiet evening of family time there are times where we […]

Some of the best zucchini recipes such as my low carb baked stuffed zucchini egg roll boast simple ingredients such as eggs, parmigiano cheese, fresh chives, Asiago and sliced ham or Mortadella. If you’re not a fan of the deli meat you can leave it out for a simple, delicious baked stuffed zucchini egg roll that’s perfect for low carb or keto fans.   Is zucchini a fruit or vegetable?   I’ve been asked this a few times so let’s break it down for those who are curious.  What I found out was interesting because like most people I thought zucchini was a vegetable when in fact it’s a fruit. This is probably why it tastes so good in either baked goods or savoury […]

Baked Cheesy Cauliflower Tots (Low-Carb, Gluten-Free)

TASTY CAULIFLOWER RECIPES START WITH PLENTY OF FLAVOUR AND ENDS WITH EMPTY PLATES.   These easy, gluten-free Baked Cheesy Cauliflower Tots are the Italian Arancini balls of the low-carb world. Arancini are rice balls filled with cheese then coated in breadcrumbs and deep-fried or baked served with a side of marinara. They are popular at restaurants as a starter or main meal paired with a salad. For today we’ll forget about those and focus on the low-carb way of switching up our favourite recipes. If you have kids the will love these with a dipping sauce or even a marinara sauce. Kids love to dip everything and if there is cheese inside you know you’ve got a winner. Sometime it’s nice to change-up recipes instead of offering chicken nuggets for example sneak in some Baked Cheesy Cauliflower Tots. Our son tends to get bored if we serve the same foods over and over. We just stare at our son when he does eat foods like this because he’s not a fan of vegetables at all.   Bringing Cauliflower to life   Delicious cauliflower recipes always start with spices and seasonings because cauliflower is very bland. If you want your cauliflower […]

Keto nachos to the rescue any time you have a craving for something salty and crunchy. Pork rinds are the keto chips of the low-carb world and today I’ll show you how to transform them into loaded cheesy pork rind nachos. What is a keto diet? A ketogenic diet (keto) is a very low-carb diet, which turns the body into a fat-burning machine. It has many potential benefits for weight loss, health and performance, but also some potential initial side effects. A ketogenic diet is similar to other strict low-carb diets, like the Atkins diet or LCHF (low carb, high fat). These diets often end up being ketogenic more or less by accident. The main difference between strict LCHF and keto is that protein is restricted in the latter. Get ready folks it’s party food time but this round is for the low-carb foodies who want to tuck into the snack table with options. Low-carb keto snacks […]

Creamy Radish Soup With Melted Mozzarella

MOVE OVER AND MAKE SPACE CAULIFLOWER BECAUSE RADISHES ARE THE NEW POTATO OF CHOICE FOR LOW CARB FOODIES.   Yes you read that right, Creamy Radish Soup with melted gooey mozzarella and loaded with triple brie and cream cheese. Very cheesy and the perfect low carb soup for breakfast, lunch or dinner. As you can see radish soup takes on a light pink colour and packed full of heart-warming nutrients. If you don’t care for the strong taste of raw radishes but love potatoes I assure you that you’ll love radish soup. Radishes are a root vegetable after all. Before radish soup came into our lives as what started as a laughable idea we only ate them raw or baked with bacon fat, which is delish by the way! We’ve also tossed whole red radishes into pasta sauce, chili or other recipes that typically would contain potatoes. Since Mrs. CBB doesn’t eat potatoes radishes became her new potato of choice. You can even make mashed radishes as you can mashed cauliflower and they both taste like mashed potatoes. Lots of mashing going on! I did not believe Mrs. CBB that radishes tasted like potatoes once roasted as they have a […]

Cream of Asparagus Soup with Asiago Cheese (Low-Carb) (Gluten-Free)

MAKING A POT OF HOMEMADE ASPARAGUS SOUP DOESN’T GET ANY EASIER.   Although we enjoy broth and tomato based soups another famous soup we make in the CBB kitchen is our Cream of Asparagus Soup. Not only is it low-carb and gluten-free it’s extremely easy to make, budget-friendly and brings home the flavours of Ontario produce when available. During early-mid June if you love to forage you can find wild organic asparagus growing in ditches around farmers fields preferably that grow and sell asparagus. Mrs. CBB grew up with her dad who loves to forage still to this day. Over the years since she was a small child she’s foraged for wild asparagus, wild mushrooms, wild berries and plenty of other free wild edibles. I’ve been introduced to the foraging life quite a few times and it’s amazing what grows and is hidden in the forests, ditches and tall grasses. I won’t get into the specifics of wild asparagus picking but Mrs. CBB found Crystal over at Whole Fed Homestead who offers a detailed blog post about How To Hunt and Forage for Asparagus. Mrs. CBB says that reading her post brings back lots of memories because this was exactly […]

Low Carb Meatballs In Tomato Sauce

Yum, Meatballs-LOW CARB FOOD ISN’T JUST FOR LOW CARB FOODIES   We’ve been using our crockpot quite a bit over the years because it’s convenient with our busy schedules. Making big batches of low carb meatballs and freezing them helps us when we want a comfort food meal. Whether we fry, bake or simmer our low carb meatballs on the stove they taste just as delicious as the slow cooker process. I always like to cook food that both Mrs. CBB and I can enjoy together so I compromise and honestly I haven’t tasted a bad recipe yet (although I’m not a fan of flax-seed breakfast cereal). When we host a dinner party I might make crockpot appetizer meatballs but replacing our traditional recipe with our low carb version and nobody notices. The carbohydrates in meatballs typically come from the breadcrumbs. If you want to replace high carb breadcrumbs opt for fine crushed pork rinds or flax-seed like we chose for these low carb meatballs. Crushing up bits of well-cooked bacon also adds to the gorgeous flavour of these low carb meatballs. If you choose to put your meatballs in a crockpot I would still suggest baking or pre-frying them […]
