Warm Cauliflower Bacon Salad with a Buttery Hot Apple-Cider Vinaigrette

There are recipes with cauliflower but not like this Warm Cauliflower Bacon Salad topped with a luscious buttery hot apple cider vinaigrette. This cauliflower salad IS the best cauliflower salad recipe for the upcoming seasons and we’re sharing the recipe with you today. This warm cauliflower salad is so good that my wife ate the entire dish before touching her meal. She said it was just so hard to stop eating it because the cauliflower and bacon pair up so nice together. It’s true.   Finally cauliflower is reasonably priced.   Cauliflower has dropped in price from $8.00 a head to $0.88 on sale at grocery stores and farmers markets across Canada. The winter will bring a spike in price for cauliflower and other imported vegetables because of the Ontario climate but don’t be afraid to add it to your grocery list. Cauliflower is very nutritious. This cauliflower bacon salad is perfect for Autumn and Winter or even serve it at Thanksgiving or Christmas dinner as a side-dish. My wife enjoys a low-carb lifestyle which means our son and I also enjoy the odd recipes with her because they are that delicious. I’m not a huge fan of raw cauliflower […]

Lack of understanding about cooking eggplant may push people away. Eggplant is unique for its awkward egg shape, deep purple colour. Eggplant is spongy and soaks up flavours which you will want to add to your eggplant dishes. I had no idea how to cook eggplant nor did I have any eggplant recipes under my belt. I was shown how to make eggplant parmigiana for a dinner party a few years back by my father-in-law. Italian eggplant dishes revolve around casserole creations […]

Extra Juicy Chicken Avocado Burger (Low-Carb)

This Is Not Your Ordinary Chicken Burger Recipe. It’s The Best, The Juiciest, The Easiest Burger You’ll Ever Make.   The Chicken Avocado Burger is probably one of the juiciest burgers we make in the CBB house because of a secret ingredient and grilling technique that you must know about. I’m a huge fan of the beef burger and I have secrets up my sleeve to create the perfect beef burger however every once in a while I like a different protein like turkey or chicken in place of beef. Although beef prices have slowly been coming down in Canada it’s still cheaper to find chicken and turkey mince for a fraction of the cost. I can get 2lbs of chicken mince for $12 where beef would cost me $21. The price difference is hefty for anyone on a budget but what you can create with a wonderful mince is by far the best part of all. Keep in mind when you are grocery shopping that buying a 1lb pack of mince that will make 4 large burgers such as this chicken avocado burger recipe that it becomes relatively inexpensive compared to eating out at a restaurant. Back a few […]

Crispy Parmesan Crusted Baked Zucchini Chips (Low-Carb)

GET YOUR CRUNCH ON WITH THESE EASY TO MAKE BAKED ZUCCHINI CHIPS!   When we found out that we could use baby zucchini to make chips right away we knew we wanted to try it out for ourselves. The final verdict wasn’t as crispy as we had thought but we perfected them so now they are the perfect Crispy Parmesan Crusted Baked Zucchini Chips. Baked chips can be just as delicious as chips that are deep-fried in oil. By all means you could deep-fry these zucchini chips to get a crisper texture if you prefer them that way. When should you buy zucchini? Anytime is a good time but if it’s price point you are after always stick to fruits and vegetables that are in season. If you are at the grocery store especially in the Spring and Summer you will find baby green zucchini for a great deal. Most times we can find it for about $0.99lb which is a great price apart from growing it yourself. My father-in-law grows zucchini throughout the summer and my mother-in-law makes gorgeous zucchini fritters that we dip in maple syrup. I’ll make that recipe for all of you once we get some […]

Baked Frittata with Mozzarella and Fennel Greens (Low-Carb)

NUTRITIOUS EGGS ARE INEXPENSIVE AND GOOD ANY TIME OF DAY   Ever since my wife started making changes to her diet to incorporate the low-carb methodology we’ve been working on new recipes like this baked frittata with mozzarella and fennel greens also known as fennel fronds. If you have never tried fennel before you must dive in and spend the few dollars  to buy one. Fennel is crunchy like celery but has an anise flavour too it that is gorgeous to eat raw, in salads or you can roast, grill and saute it. For this baked frittata recipe I only used the fennel greens as opposed to just the fennel bulb since most people don’t know what to use the fronds for and toss them in the garbage. You can use the fennel fronds to infuse water to make a healthy tea, fennel infused oil, stuffed in fish or to make a lovely soup stock. The sky really is the limit if you love the flavour of fennel fronds when cooking and adding it to your favourite recipes. How to clean fennel When I use the fennel bulb I chop the tough stems like cabbage after I slice the fennel […]

The Best Oopsie Bread Stuffed with Pulled Pork (Low-Carb)

OOPSIE IS A LOW-CARB BREAD REPLACEMENT THAT IS TAKING THE WORLD BY STORM!   If you haven’t eaten bread in months and you crave it THIS is the easiest and tastiest alternative in my opinion. I’m not a low-carb eater but my wife is and I’m the guinea pig who helps her create recipes and has to taste them first like this Oopsie Bread which I gave 5 stars. Don’t worry if you are thrown off by the captivating name of Oopsie bread because I was as well. My wife came to me one day and said the her friend who is also on a low-carb diet made this recipe for low-carb bread called, Oopsie bread. I said, Oopsie what? You probably did too BUT let me tell you even the skeptic in me was changed once I tucked into that delicious low-carb crock-pot pulled pork on 2 Oopsie bread rolls. Where does the Oopsie Bread name come from? I did a little research hoping to find out about Oopsie bread and just as the name suggests it was made as a mistake but a mistake that has made non-bread eaters rejoice. If it were me the recipe would be […]

Cauliflower Mash Cottage Pie (Low Carb)

AN EASY DINNER THAT HITS THE SPOT   The hot new low carb substitute for mashed potatoes is cauliflower. Cauliflower mash is buttery, creamy and delicious plus you can hardly tell that it’s not mashed potatoes especially if you’re trying to fool fussy eaters. Since cauliflower has come down in price from over $6 a head down to a reasonable $2.99 each or 2/$5.00 it’s worth experimenting once again. One of my favourite cauliflower recipes is my baked cauliflower with cheese as a side dish to roast beef or any other protein.   How to make cauliflower mash   Creating cauliflower mash is very easy so don’t let any of the many names fool you as they are all the same thing: Smashed cauliflower Mashed cauliflower Cauliflower puree Cauliflower mashed potatoes (there is nothing potato about this recipe but some people need to call it mashed potatoes to help describe what it is that you will be eating). How long should you boil the cauliflower? I make sure to chop my cauliflower into small florets so they cook faster. You’re going to mash it all up anyways so it doesn’t really matter at this point. The key is to keep […]

Cauliflower Rice & Broccoli Stir-Fry with Sausage (Low-Carb)

REPLACE WHITE RICE WITH CAULIFLOWER RICE   This easy to make cauliflower rice recipe will blow your taste-buds away and I’m not joking. Cauliflower rice is the new mashed potato and versions of this dish are getting rave reviews all over the world especially from low-carb eaters who quit eating rice. Mrs.CBB is a rice quitter. I was a big skeptic when Mrs. CBB kept telling me you could turn cauliflower into mashed cauliflower which tasted just like mashed potatoes but better. I gave it a try last year and didn’t mind it at all although I’m a potato lover at heart coming from the UK where we ate lots of potatoes growing up. There’s nothing quite like a Sunday roast dinner with mashed potatoes, gravy, veg and Yorkshire pudding. Mrs. CBB was all fired-up to make this cauliflower rice likely because new recipes are exciting when you are limited with what you can eat. Armed with our kitchen-tools, a pot and cheese grater away we went. With the addition of cumin and turmeric along with Frank’s Red Hot sauce this cauliflower rice dish came together beautifully. Not only was the colour vibrant but it looks as delicious as the […]
