FOR THOSE TIMES YOU CRAVE SOMETHING SWEET   Not only are these lemon coconut macaroons budget-friendly they are also super easy to make. Those who enjoy these little treats will be amazed by the simplicity of making them yet revel in the fluffy coconut center and decadent outer chocolate flavours. Don’t panic if you’re not an of lemon either because you can simply eliminate the citrus and add some pure vanilla extract for more of a  traditional coconut macaroon. Sharing cookies is a great way to say thanks to neighbours, friends and family without breaking the bank. I often bake cookies to bring to our neighbour’s house just to say thanks for being a good neighbour and friend. There doesn’t have to be a special occasion to make someone smile. While reviewing recipes for lemon coconut macaroons on Google and Pinterest I noticed that many bakers said that their mixture was too runny. I wanted to see what problems other people were having with their recipes so I could perfect my own. When reading over some professional chefs recipes I found that they too don’t go into much detail about how thick the lemon coconut macaroon mixture needs to be […]

THIS IS WHAT YOU DO WITH PUMPKIN PUREE   As soon as October hits all we see is pumpkin this, that and everything else in our social media feeds. Well I’m sharing with you these moist Pumpkin Scones because you WILL Love them, especially if you are a Fall pumpkin fanatic like I am. I know I’m tooting my horn but they are that good. Growing up in the UK we had scones (also known as tea biscuits) quite often because they are so easy to make and you can flavour them with just about anything you like. My mum made scones at least once a week and the basic scone recipe is probably one of the first she ever taught me. I truly was in another place when I was eating that pumpkin scone and I knew […]

Dundurn Castle: The Best Shortbread Cookie Recipe

THE EASIEST BUTTERY SHORTBREAD COOKIES   Earlier this year when my parents came to visit we made our way to Hamilton, Ontario to enjoy a tour of Dundurn Castle among other things such as the Royal Botanical Gardens which are beautiful this time of year. Dundurn Castle is considered a National Historic Site in Canada and I thought it would be a great place to tour along with the Hamilton Military Museum which is on the grounds. The great part about the museum is you get to dress up in clothes from that era so you really get a feel for what it was like. When you first walk through the doors of the Dundurn Castle you enter at the side where the workers would come and go. It certainly is an eerie feeling and I’d be lying if I didn’t say I felt like eyes were watching me. You just get this feeling that the house is haunted or you start to envision what had happened when the castle was up and running. If you live in the Hamilton area you may notice many couples choose to hold their wedding on the grounds of Dundurn Castle as well having […]

Chocolate Chip Cookie Dough Brownies

EDIBLE COOKIE DOUGH AND BROWNIES   I made these delicious Cookie Dough Brownies when I went to visit my buddy back at the end of 2013. He knows how much I enjoy being in the kitchen so I thought it would be a nice surprise to bring a treat for him and his daughter when I went for a visit. Like myself he loves brownies and cherry cheesecake although I never did get around to baking him one of those like I said I would. Maybe one day. I’ve been meaning to post this recipe for a while now but I had forgotten about it until I found it in my archives which I was scrolling through the other day looking at photos. What I did was I took my chocolate chip cookie and fudgy brownie recipe and created this cookie dough brownie recipe. I’m forever making homemade cookies and testing out new homemade brownie recipes so I figured I could combine the two to make this bar recipe. Why enjoy a regular brownie when you can jazz it up? Don’t get me wrong, I stand by the Classic Fudge Brownie. You only have to look at my Pinterest page […]

Classic Madeira Cake

THE PERFECT SLICE OF CAKE   What could be easier to make than a piece of lemon flavoured Madeira cake with almonds that’s moist but practical at the same time. My mother made the Madeira cake for us when I was little and now I make it for my family. It’s not only easy to make but it’s not expensive either, When you take it out of the oven it’s a beautiful golden colour with a lemon aroma. Madeira cake is a light cake that is a bit denser than a sponge cake but tastes so much better. Some compare the Madeira cake to the pound cake. The Madeira cake was named after the Portuguese Madeira wine which was popular in England in the 18th and 19th century. . Today you might find this delicious cake served with Madeira on the side. Traditionally the Madeira cake usually has either lemon or an orange peel mixed into it. Today I am using lemon. The Madeira cake can be used in many ways such as dipping in chocolate, placed in trifles such as my tiramisu or eaten in slices. Many people enjoy a slice in the morning for breakfast or for a […]
