Cauliflower Tomato Soup with Crunchy Bacon (Low Carb)

A RICH TOMATO SOUP THAT IS FULL OF NUTRIENTS AND EASY ON THE BUDGET   During the weeknight when you want a fresh pot of homemade soup this a rich cauliflower tomato soup recipe which you can prepare in under an hour. Ideally if you have a crock-pot you could simmer this cauliflower tomato soup on low while you are gone to work or running errands. When you come home all you need to do is grab a bowl and spoon and your appetite. I’m always looking for ways to jazz up a tomato soup recipe to add variety especially since our father-in-law provides us with jars of fresh canned tomatoes from his garden. You can certainly taste the difference in a fresh tomato soup recipe when using organic tomatoes however it’s not necessary as I know not everyone has access to organic produce and it can be costly. Alternatively check the reduced rack at the grocery store which is great for tomatoes you can use up quickly or for special deals of the week. For this recipe using a jar of tomato marinara or strained crushed tomatoes also known in Italian as, “Passata Di Pomodoro” which you can find […]

British Cinnamon Apple Pie Bars

THE DELICIOUS TASTE OF APPLE PIE WITHOUT FUSS   Apple pie is one of my all-time favourite desserts that my mum used to make when I was a little boy. Now that I’m in charge of the kitchen when I’m in the mood for apple pie I whip up a pan of these snack-size British Cinnamon Apple Pie Bars which are perfect on the run or packed in a lunch. Don’t get me wrong I love a nice slice of apple pie but I don’t always have the time to roll out the dough to make pie crust which is why I decided to experiment with apple pie bars instead. You get the same classic Apple Pie taste but in squares that you can carry along with you. Try putting a slice of apple pie in your hand and you’ll know exactly what I mean. These apple pie bars have a traditional British shortbread crust followed by a thick homemade apple pie filling and topped with brown sugar, white sugar, cinnamon, nutmeg, butter and flour. You can clearly see by the photo how lovely these apple pie bars turn out but the key is to wait until they are cooled […]

Crispy Cheesy Cauliflower Hash Browns – Low Carb

DITCH THE HIGH CARB POTATOES FOR THESE FILLING LOW CARB CAULIFLOWER HASH BROWNS.   These Crispy Cheesy Cauliflower hash browns will satisfy your potato craving and perfect as part of a low carb breakfast or brunch with scrambled eggs, sausages, bacon and avocado slices. If you’re looking for a low carb cauliflower hash brown recipe that is grain-free and gluten-free this is a wonderful healthy recipe that will satisfy your tummy. I don’t exclusively eat a low carb diet but when I create some of these low carb recipes I have to admit they are darn good. Just lately I find that I’m going in for seconds and thirds and my wife who seems to catch me tells me that I must be changing my ways. These days we hardly eat bread, pasta, potatoes or anything too high carb in our house which is a good thing because too many carbs can lead to excess weight gain. In keeping with our new way of eating in the CBB house (at least for my wife) I work hard to create alternative healthy low carb recipes that she can enjoy. Mrs. CBB told me that these cheesy cauliflower hash browns hit […]

Spooky Halloween Oreo Rice Krispies Treats

IT’S HALLOWEEN PARTY TIME FOR THE KIDS AND I’VE GOT A PLATTER OF BAT-FILLED SPOOKY RICE KRISPIES TREATS.   Three cheers for Spooky Halloween Oreo Rice Krispies Treats! You can see the scary bats in between the layers of marshmallows and cereal… I can! Tasty little buggers they are and I’m sure the kids will agree. Halloween is tomorrow but the last-minute party invites were coming in from parents as if they forgot they were hosting a party. No problem but when we go to a party we like to bring something along with us. My wife who is not a fan of baking asked me to make something child-friendly that was easy to eat for the Halloween party this weekend that I won’t be attending. Related: A guide to food colourings and how to use them Since we live with a picky two-year old eater I thought I’d make some Oreo Rice Krispies Treats and colour them orange with Wilton Icing Colour. If you have kids who are allergic to synthetic dyes you can opt for all-natural dyes although they may be tough to find. I honestly wasn’t sure if our son would like the Oreo Rice Krispies Treats […]

TODDLER TESTED AND APPROVED…OH AND I APPROVE TOO, DELICIOUS COOKIES.   All you have to do is…Mash, Mix, Scoop and Bake to create delicious Banana Oatmeal Chocolate Chip Cookies when you want something sweet but not too sweet. These Banana Oatmeal Chocolate Chip cookies truly are the easiest cookies to make in the world because there’s only three ingredients. Yes, you can make delicious cookies with three ingredients all of which most people stock in their pantry especially if they have kids. Since Halloween is next weekend we thought it would be a cool idea to add a bit of premium orange food colouring to convey a pumpkin cookie. I had to laugh because once our son devoured the first one he was already on his tippy-toes reaching for another from the plate on the counter. He had chocolate all over his little face. I don’t know how he does it sometimes. Our son is only two-years old and loves to eat cookies although he doesn’t get them every day. I haven’t met any kids who aren’t fans of cookies and to keep them healthy I wanted to make something that he could enjoy but without all the dad guilt. […]

Low Carb LCHF Cream Cheese Lemon Pound Cake

ENJOY A SLICE OF LEMON HEAVEN   If you’re looking for a low carb, sugar-free, grain-free, gluten-free cream cheese lemon pound cake then you’ve clicked on the right link because even I can’t tell it is low carb and polished off a few slices. Creating low carb dessert recipes for my wife to enjoy can be challenging but once you understand how the ingredients work together easy low carb desserts can be brought to life. Creating recipes is about experimenting which can be fun even if your recipe doesn’t turn out as planned. I’m no pastry chef and working with flour that contain no gluten, eggs, butter, coconut oil and cream cheese to re-invent the pound cake took some trial and error. With my wife’s birthday this month I wanted to create a low carb pound cake since it’s her favourite type of cake. She loves how a traditional pound cake is dense and perfect for dipping in coffee or milk. It has been almost one year since she’s given up sugar, grains and most fruits and vegetables to lead a low carb lifestyle. She loves this way of eating, feels great and has lost all the weight she gained […]

Guilt-Free Crispy Deep-Fried Pickles (Low-Carb)

LOW-CARB SNACK TIME DOESN’T GET ANY EASIER THAN THESE CRUSTED DILL PICKLE CHIPS.   This is the recipe for deep-fried pickles that you don’t want to turn away from especially if you’re a dill pickle fan and not interested in the extra carbs from thick batter. The first time Mrs. CBB and I had deep-fried pickles was when she was about 6 months pregnant and we stopped off for dinner at a Fish n’ Chips dive in town. The restaurant was empty as it was the end of the night so we were guaranteed hot n’ fresh which is what I like. While looking over the menu Mrs.CBB noticed they offered deep-fried pickles. She was like a little kid all excited so we ordered a plate as an appetizer. I wasn’t a huge dill pickle fan but my wife goes mad for them. I was a changed man when I tasted the deep-fried pickles dipped in mayonnaise sauce. Not only were the deep-fried pickles good but I ate some of the best fish n’ chips since arriving in Canada almost 9 years ago. Growing up in the UK fish n’ chips is a big deal so now we have a […]

HARVEST THE SCENT OF FALL AND LET SIMPLE FLAVOURS FIND THEIR WAY INTO YOUR HOME.   Enjoy this warm spiced apple pear sauce to finish off a meal for an Autumn dessert. If you’re anything like my wife she has to smell every spiced candle on the market when the Autumn season say GO. I say forget the candle and fill your home with love starting in your kitchen. Let me show you what we’ve done in less than 30 minutes. Trying to create recipes for fresh pears and apples this time of year is fairly simple if you stick to basic Fall Harvest recipes that have been served up for decades. In our fruit basket we had 2 Bosc pears and 2 Royal Gala apples that needed using up so in less than 30 minutes I had a small kettle filled with spiced apple pear sauce. Related: Magically Moist Apple Cake with Butter Rum Raisin Glaze The apple sauce has very little sugar added since apples and pears naturally have sugar. You don’t want to overpower the fresh organic flavours of your […]
