Seductive Peanut Butter Protein Cookies (Low-Carb, Sugar-Free)

TIME IS ON YOUR SIDE WHEN BAKING THESE PEANUT BUTTER PROTEIN COOKIES ESPECIALLY WHEN YOUR SWEET TOOTH IS WAITING.   Do you know that cookie that you just can’t stop eating because it keeps calling your name? Now you know why I called these Seductive Peanut Butter Protein Cookies. Not only are they super easy and quick to make but they are sugar-free and low-carb friendly. I’m always working with Mrs. CBB in the kitchen to create new low-carb treats that we can both enjoy. I’m a hard-core sugar boy who likes something sweet just about every day. Once in a while I don’t mind dipping into the wife’s stash of desserts especially if I don’t have anything prepared for myself. I know we’ve shared lots of low-carb dishes on CBB lately but don’t get scared off from enjoying these recipes in your life. They are delicious, full of flavour and won’t make you feel like you’ve just eaten an entire pizza to yourself once you’re done a meal. You know that heavy tummy feeling I’m talking about. Protein Peanut Butter Cookies>> Don’t knock em’ until you try them. Most often we don’t even tell our friends what they are […]

Cream of Asparagus Soup with Asiago Cheese (Low-Carb) (Gluten-Free)

MAKING A POT OF HOMEMADE ASPARAGUS SOUP DOESN’T GET ANY EASIER.   Although we enjoy broth and tomato based soups another famous soup we make in the CBB kitchen is our Cream of Asparagus Soup. Not only is it low-carb and gluten-free it’s extremely easy to make, budget-friendly and brings home the flavours of Ontario produce when available. During early-mid June if you love to forage you can find wild organic asparagus growing in ditches around farmers fields preferably that grow and sell asparagus. Mrs. CBB grew up with her dad who loves to forage still to this day. Over the years since she was a small child she’s foraged for wild asparagus, wild mushrooms, wild berries and plenty of other free wild edibles. I’ve been introduced to the foraging life quite a few times and it’s amazing what grows and is hidden in the forests, ditches and tall grasses. I won’t get into the specifics of wild asparagus picking but Mrs. CBB found Crystal over at Whole Fed Homestead who offers a detailed blog post about How To Hunt and Forage for Asparagus. Mrs. CBB says that reading her post brings back lots of memories because this was exactly […]

Low Carb Meatballs In Tomato Sauce

Yum, Meatballs-LOW CARB FOOD ISN’T JUST FOR LOW CARB FOODIES   We’ve been using our crockpot quite a bit over the years because it’s convenient with our busy schedules. Making big batches of low carb meatballs and freezing them helps us when we want a comfort food meal. Whether we fry, bake or simmer our low carb meatballs on the stove they taste just as delicious as the slow cooker process. I always like to cook food that both Mrs. CBB and I can enjoy together so I compromise and honestly I haven’t tasted a bad recipe yet (although I’m not a fan of flax-seed breakfast cereal). When we host a dinner party I might make crockpot appetizer meatballs but replacing our traditional recipe with our low carb version and nobody notices. The carbohydrates in meatballs typically come from the breadcrumbs. If you want to replace high carb breadcrumbs opt for fine crushed pork rinds or flax-seed like we chose for these low carb meatballs. Crushing up bits of well-cooked bacon also adds to the gorgeous flavour of these low carb meatballs. If you choose to put your meatballs in a crockpot I would still suggest baking or pre-frying them […]

Crunchy Pan-Fried Parmesan Crusted Hard-Boiled Eggs (Low-Carb) (Gluten-Free)

HARD-BOILED EGGS LIKE YOU’VE NEVER TASTED BEFORE   YES you have to try this. These are perfect snacks for holidays, birthday’s or any celebrating including Super Bowl where you just want to grab, dip and get it in your tummy. In our house we don’t just hard boil one or two eggs at a time. We make hard-boiled eggs by the dozen and use them for egg salad sandwiches, snacks and now we will add this to our low carb snacks list. Hard boiled eggs aren’t just for breakfast especially when you follow a keto diet also known as low-carb diet like Mrs.CBB does. I enjoy it in moderation as I’m not fully involved with this lifestyle like Mrs. CBB is. For the most part I end up eating the same foods to cut down on costs but on occasion I go my route. You know I just crave carbs after a while especially when my aim isn’t to give them up.   We’re a low carb family   One thing I won’t pass up is eating eggs any way I can get them, except raw. This recipe for pan-fried Parmesan hard-boiled eggs was a fluke to be honest. While […]

Sweetheart Cinnamon Cookies (Low Carb) (Sugar Free)

SIMPLE COOKIES MADE WITH LOVE AND KISSES OF CINNAMON.   Who doesn’t love the taste and smell of cinnamon? Every time I walk through a mall with a Cinnabon shop where they make the most delicious smelling cinnamon buns I get weak at the knees. These soft cinnamon cookies are low-carb and perfect as breakfast cookies with a hot beverage or a snack throughout the day. Best of all they are sugar-free. If you or someone you know enjoys a low-carb high-fat lifestyle these Sweetheart Cinnamon Cookies make the best homemade gifts. With Valentine’s Day in the next few days go ahead and spread some low carb love and bake up a batch even if they are for yourself. This recipe for soft cinnamon cookies use both almond flour and coconut flour for texture and flavour purposes. Both the almond and coconut are a low carb flour and used in many dishes along with lupin flour. Lupin flour is produced by drying and grinding the lupin bean. You may also know these as lupini beans (rubbery outside skin) you can buy in cans at the grocery store in the International aisle. We have yet to try lupin flour but may […]

Amazing Creamy Potato Leek Soup

WARM UP TO A BOWL OF CREAMY POTATO AND LEEK SOUP TODAY.   Imagine a hot bowl of Creamy Potato Leek Soup and bacon with slices of homemade fresh bread slathered in butter for afternoon lunch or evening tea. You can stop imagining now because I have that recipe for you today which my family loves so I made a big pot earlier this week. This creamy potato leek soup recipe will keep you coming back for more until your tummy has had enough. You know that feeling when you’re satisfied and you have a great big smile on your face. This is what I get when I enjoy homemade soup. It’s hard to compare any homemade soup to a can of soup which is why I always try to make 2 large pots of soup to eat and freeze for another day. Most often I just double a recipe which makes cleanup easier too. Having done my meal planning for the next couple of weeks I decided to go with leeks in my vegetable shopping.  We love vegetables and what ever is available at a price that is reasonable is good. Now you all know me by now to […]

Swirled Nutella Banana Bread

THE SECRET TO MY POPULAR MOIST BANANA BREAD IS REVEALED TODAY. BE CAREFUL WHAT YOU DO WITH THIS SWEET INFORMATION.   In a perfect Nutella world we’d all love Nutella but for now you either love it or you hate it. I’m going to Nutella bomb your kitchen today with a Nutella banana bread recipe like you’ve never tasted before. Creating recipes with Nutella seems pretty easy and it is because chocolate practically goes with everything, especially bananas. I may be biased but this is one of the best and moist Swirled Nutella Banana Bread recipes that has a bit of ooey-gooey at the top. I promise you’ll either be licking your lips or your fingers when no one is looking or grabbing another piece to mask those sticky fingers.   Breakfast Nutella   All you need is a spoon…and maybe a slice of bread. Nutella has gotten a bad rap after consumer complaints about their nutritious breakfast advertising over the years but production is still going strong. Someone has to be buying it! This is chocolate folks and probably not the best breakfast but heck, everyone needs a little chocolate boost in the mornings some times. Years ago when […]

Winter White Chocolate Coconut Macaroons (Low Carb) (Sugar-Free)

INEXPENSIVE LOW CARB SWEETS TO HAVE ON HAND IN THE FREEZER.   Mrs.CBB and I were working on low carb baking ideas that we could make for the holidays when we decided to create one of my favourites, coconut macaroons. Many moons ago when Mrs. CBB was working at Tim Hortons she remembers making coconut macaroons and dipping them in milk chocolate. That was part of her role when she worked the night shift with the baker back when they used to make donuts, cookies and muffins fresh in the restaurant. Chocolate coconut macaroons were an everyday cookie on the popular coffee shop menu and were sweet, chewy and had a crunchy exterior. Mrs. CBB said it was also hard to resist just eating one. My challenge was to recreate coconut macaroons but a sugar-free and low carb version. When I lived in the UK I used to make the sweet version of coconut macaroons because they were delicious and inexpensive to make. I didn’t have fancy scoops though and would just roll them and pat them down but I like this version better. You can buy a bag of coconut in Canada for $1.00 which would be about 2 […]
