ANOTHER WAY TO ENJOY EGGS!   If there is something that I really crave this time of year it has to be classic British Scotch Eggs! Scotch Eggs were invented by the London department store Fortnum and Mason in 1738 way before my time but they are just as popular today as they were back then. I love to pair Scotch Eggs along with pork pies with a chunk of strong cheese and some pickled onions. Let’s not forget the homemade chutney and of course homemade bread! Oh yum. EAT YOUR GREENS…   Yes you can eat beet leaves and guess what… they are good for you too. The other week I shared with all of you my mom’s creamy beet crunch recipe which is a great way of using beetroot rather than pickling them. Now that the Fall season is in full-swing you will find beets in just about any grocery store for a decent price.   No food waste   Do you remember how I mentioned that you could use the beet leaves? I’ve taken simple beet leaves which most people would toss in the bin and turned them into a great stir fry with lots of yummy vegetables. This is an ideal pairing with the beet crunch. BEETS ARE FULL OF FLAVOUR   We often joke about making a casserole on the Canadian Budget Binder Facebook page and in some ways today’s recipe is just that and we’re using delicious beets. Pineapple Rice an easy side dish

SWEET MEETS SAVORY   I don’t know many people who don’t like pineapple. It’s so juicy and sweet and perfect in this pineapple rice recipe. We all look for quick easy dinners for our families, or for sides to go with a main course and this is something I have made for my family for years. In all honesty both of my boys would prefer regular rice over potatoes most days unless we are having french fries or mashed potatoes with gravy.   BAKED AND CRISPY LIKE FRENCH FRIES   Sweet potato fries are more than just a healthy alternative to the traditional potato french fry. These orange fleshed beauties are packed with nutrients and won’t give you that heavy full feeling that you get with a white or yellow fleshed potato. When my wife started on her low gi diet she introduced the sweet potato into her meals rather than a bog standard potato. All we read about was how the sweet potato was a “super food” in the nutritional world or the bees knees of root vegetables. Now if you asked me a few months ago if I would have eaten her fried sweet potato fries I would have instantly told you no way. I was not a fan of the sweet potato or yam as they both seem the same to me and I’m still not today unless they are baked sweet potato fries in the oven.
