Quick Apple Cinnamon Chicken Rice with Raisins

AN EASY SIDE-DISH READY IN MINUTES   These days time runs short in our family so making quick meals are a priority which means I often find ways to speed things up a notch. The other day we created a Crock-pot Mexican Chicken with Vegetables (coming soon to the blog) and this Apple-Cinnamon Chicken Rice with Raisins as a side-dish.   Both recipes are simple to make with easy clean-up to follow   We aren’t fans of buying quick cooking rice in boxes or packets so I thought I would try cooking my chicken rice dish right in the rice cooker to see what would happen. Voila, it turned out fluffy and perfect! Classic Scotch Eggs

ANOTHER WAY TO ENJOY EGGS!   If there is something that I really crave this time of year it has to be classic British Scotch Eggs! Scotch Eggs were invented by the London department store Fortnum and Mason in 1738 way before my time but they are just as popular today as they were back then. I love to pair Scotch Eggs along with pork pies with a chunk of strong cheese and some pickled onions. Let’s not forget the homemade chutney and of course homemade bread! Oh yum. This meal is typically called a ploughmans’ where you have a variety of cheeses and pickles and bread typically found at the pub to drink with a nice dark ale.
