Creamy Bacon Tomato Salad (Low-Carb)

ORGANIC PRODUCE HAS SOME OF THE BEST FLAVOURS IN THE WORLD   I wasn’t sure if I should call this recipe Tomato Bacon Salad or Bacon Tomato Salad so I went with both only because there’s lots of cherry tomatoes and tonnes of bacon! There’s no pasta or bread in this creamy Bacon Tomato Salad that I’ve created from organic vegetables and herbs from the garden. All you need is a fork, an appetite for freshness and a love for tomatoes and bacon. My wife who enjoys a low-carb/Paleo diet said she was in the mood for a bacon tomato sandwich loaded with mayonnaise on oopsie bread or savoury low-carb waffles. The Oopsie bread and waffles are alternatives to adding extra carbs from eating traditional breads but we didn’t have any made. I’m not a fan of the oopsie bread but when you stop eating bread anything that looks and tastes like bread is a sure winner. Anything Is Possible With Your Imagination Of course you can make beautiful green fries with an avocado, if you use your imagination. I am a huge fan of the avocado and try and scoop them up when they go on sale at the grocery store. My homemade guacamole dip is a popular tangy party dip around our house and often gets top priority when we throw a get-together for our friends. What is an avocado? If you are not familiar with the avocado they are native to Central Mexico where they grow in abundance and also known as an “alligator pear”. Cultivated in Mediterranean and tropical climates the avocado boasts a green flesh that has a texture similar to butter. You can even grow avocado from the unrefrigerated pit indoors which will sprout but will not produce fruit, rather a decorative tree that you can prune. Grafting from a fruit bearing tree may help speed up the maturity process of an avocado tree. Mr.CBB’s Tangy Easy Guacamole Dip $ 4.10

When the hot weather approaches Mrs. CBB and I have an incessant urge to eat lots more vegetables and fresh salads and this tangy easy guacamole is no exception. I first fell in love with guacamole after tasting the Indian version while in India a few years back. My recipe is not near as fancy as the Avocado Raita nor as authentic as the Mexican version but it’s tasty and is just as addictive. There are many reasons to eat more avocados  if not for the high fat content(14.1 g of fat in a half avocado-mostly unsaturated with 2 grams saturated) but for the heart healthy vitamins. I like to serve my guacamole with tortilla chips, fresh-cut vegetables or on my homemade whole wheat tortillas (I promise you will never buy them again they are so easy to make), which I will be sharing with you shortly. Guacamole is a relatively frugal dip to make with the real cost coming from the avocados running about $1.25 each or cheaper depending where you buy them.  We picked up a pack of 6 for $2.99 on the reduced rack last week so we’ve been making this guacamole recipe over and over for about $4.10.
