Easy Cheesy Chili Cornbread Muffins

YES IT’S CHILI IN A MUFFIN!   I bet you thought this was just a cheesy cornbread muffin with chili powder but NO it’s a Cheesy CHILI Cornbread Muffin. No need to cook up a pot of my Turkey Chili or Mr. CBB’s Slammin Chili with these because I’m giving you the cornbread muffin and the chili all in one. The Chili Pepper is widely used around the world but did you know it’s spelled differently which is why you may see chile con carne, or chilli con carne. Chili pepper, the spicy fruit of plants in the genus Capsicum; sometimes spelled “chilli” in the UK and “chile” in the southwestern US Now that Fall is in the air and back to school is in full swing for the kids I’m busy in the kitchen using my free time to create delicious recipes for my family. If I can make ahead and freeze meals to make week-night cooking easier, I’ll do that. I have used this basic chili cornbread recipe for years as it was in one of my old recipe books which I can’t seem to recall. I have tweaked the cornbread recipe to my liking through trial and […]

The Best Turkey Chili Recipe

A TURKEY CHILI RECIPE WITH FARM FRESH VEGGIES!   Time is not on everyone’s side but if you meal plan you can make recipes like this gorgeous Turkey Chili Recipe that CBB fan Chandra has submitted to share with all of you. These days it seems easier to just buy canned and frozen food instead of spending the time chopping up vegetables for delicious, healthy recipes. I’ve tried some award-winning chili recipes in my time with beef but never have I made a turkey chili before. I was intrigued when Chandra shared this on my Facebook page in our What’s For Dinner? nightly post. Using the same proteins for recipes can get boring plus it’s nice to add leaner cuts of meat or minces like turkey to recipes to make them healthier. Mrs. CBB and I have always enjoyed turkey meals made from mince such as turkey burgers or turkey pot pie. Either way kicking beef to the curb for a day or so is not a bad thing if you want to experience new flavours. You may even find turkey to be cheaper to buy rather than beef mince. If you don’t mind cooking a whole turkey you can […]

Mr.CBB’s Slammin Crockpot Chili $6.50

Mr.CBB’s Slammin Chili! Last week I promised I would get you my budget friendly slammin chili recipe and here it is. I hope I had you all drooling over my Spicy Cheesy Bacon Corn Bread which I have accompanying this dish as it’s worth the extra time to make them.  For some a thick slice of fresh hot slice of home-made bread slathered in butter will do the trick but I wanted to try something new. If you like to try something different.. give it a shot, it’s very tasty. Mr. CBB’s Slammin Chili can be as mild as you like it or as Spicy as you like it. We prefer somewhere in the middle to protect us from the morning after effect in the loo as we don’t have stomachs of steel in the CBB home. There are many types of chili peppers depending on what region of the world you are in. They also differ in heat and sweetness but for the most part add tonnes of flavour to any dish. One of my favourite peppers is the pepperoncini Chili pepper.. particularly the one’s that are marinated or pickled. I can eat those one after another with some fresh bread.. you know the one’s […]

Mr.CBB’s Spicy Cheesy Bacon Corn Bread $5 a pan

By: Mr.CBB I was inspired to make cornbread from a couple of fans on facebook who had talked about corn bread. If you have followed along with me you know I am terrified of making any bread whatsoever. My attempts in the past have all went south right into the bin.  When I realized corn bread had no yeast, well the ideas started popping into my head. Both Aunt B’s Kitchen out of British Columbia and Beckie Thiessen who shared their recipes with me. I decided to make cornbread but wanting to design my own recipe for the blog. I don’t think I realized how versatile cornmeal is and how cheap it is to buy. I love to experiment with texture and flavour so sometimes, my recipes fail but most they are an epic success! (well to us at least, we love them) This particular recipe has flavours that Mrs. CBB and I both love Cheddar, Bacon and Jalepeno.  The spices were simple and I added a bit of cumin to make the bread pop with flavour. I suggest eating it straight from the oven when the cheese is oozing… hot! I also did not have buttermilk which I read is the best for cornbread… […]
