Low Carb LCHF Cream Cheese Lemon Pound Cake

ENJOY A SLICE OF LEMON HEAVEN   If you’re looking for a low carb, sugar-free, grain-free, gluten-free cream cheese lemon pound cake then you’ve clicked on the right link because even I can’t tell it is low carb and polished off a few slices. Creating low carb dessert recipes for my wife to enjoy can be challenging but once you understand how the ingredients work together easy low carb desserts can be brought to life. Creating recipes is about experimenting which can be fun even if your recipe doesn’t turn out as planned. I’m no pastry chef and working with flour that contain no gluten, eggs, butter, coconut oil and cream cheese to re-invent the pound cake took some trial and error. With my wife’s birthday this month I wanted to create a low carb pound cake since it’s her favourite type of cake. She loves how a traditional pound cake is dense and perfect for dipping in coffee or milk. It has been almost one year since she’s given up sugar, grains and most fruits and vegetables to lead a low carb lifestyle. She loves this way of eating, feels great and has lost all the weight she gained […]

Lemon Coconut Macaroons

FOR THOSE TIMES YOU CRAVE SOMETHING SWEET   Not only are these lemon coconut macaroons budget-friendly they are also super easy to make. Those who enjoy these little treats will be amazed by the simplicity of making them yet revel in the fluffy coconut center and decadent outer chocolate flavours. Don’t panic if you’re not an of lemon either because you can simply eliminate the citrus and add some pure vanilla extract for more of a  traditional coconut macaroon. Sharing cookies is a great way to say thanks to neighbours, friends and family without breaking the bank. I often bake cookies to bring to our neighbour’s house just to say thanks for being a good neighbour and friend. There doesn’t have to be a special occasion to make someone smile. While reviewing recipes for lemon coconut macaroons on Google and Pinterest I noticed that many bakers said that their mixture was too runny. I wanted to see what problems other people were having with their recipes so I could perfect my own. When reading over some professional chefs recipes I found that they too don’t go into much detail about how thick the lemon coconut macaroon mixture needs to be […]

Ooey Gooey Coconut Cherry Pie Bars

CHERRY PIE SWITCH UP!   I’ve been after something sweet to eat lately and these Coconut Cherry Pie Bars hit the spot. My wife and I love Cherries and after a recent trip to her parents house we left with a huge shopping bag full of them. My father-in-law has many cherry trees on his property and asked us to please take some as they can’t eat them all. They hate to see the fruits fall to the ground and waste so they try to give them to friends and family to eat up. Last year I made Cherry Ricotta Turnovers with homemade Marshmallow cream with cherries from their property and this year I’m making Coconut Cherry Pie Bars. I’m a huge fan of bar recipes because you can easily eat them on the run and they are the perfect snack size treats for break time or dessert. If you are wondering where the ooey gooey part of the Coconut Cherry Pie Bars is coming from it’s the condensed milk. Anytime you used condensed milk it adds depth and creaminess to any recipe and I find it keeps the bars moist so I chose to add a layer in this […]

Chickpea Coconut Flax Chocolate Chip Cookies

What’s Hiding In Your Cookie? I know what you are thinking, cookies made with chickpeas sound disgusting but the truth is far from that. You know from previous posts that I am a chickpea fan and will use all kinds of chick peas to create recipes for our menu plan. These are the crazy cookies of the year for me I think but they work and I’m sure once you make them you will agree that you can hardly taste chickpeas at all in the cookie. The best thing is that it’s a cookie recipe for kids and they won’t even know they are eating healthy chickpeas in their favourite chocolate chip cookies. Where did my crazy cookie idea come from? As I was getting ready to cook my dry chickpeas in the crockpot I had this thought about making cookies with chickpeas. There was something about the colour and texture of the mashed chickpea that reminded me of what the batter for chocolate chip cookies looked like. That’s when the bright idea hit me to try and create cookies with chickpeas. I’m like to make a mess in the kitchen exploring new foods so why not give it a […]
