One-Pot Meal: Courgette and Tomato Goulash

FILL THOSE HUNGRY BELLIES WITH THIS INEXPENSIVE ONE-POT MEAL.   It has been surprisingly cold and white (Yes that means snow) here in Manitoba,Canada the last couple of days. I think Mother Nature forgot to switch to Spring but that’s fine because it gives me more opportunity in the kitchen to create new recipes. Having said that it was time for me to make a pot of stick to your ribs goulash. Originally this was to be a soup recipe but I wanted it to be bulkier to fill everyone up easily. This is a great way to stretch a meal or to add any leftovers looming in your refrigerator that look like they could use some love.   What are Courgettes?   I knew you would ask! Don’t worry they aren’t something you have to source as they are found in every grocery store.   Photo Source: Rik Schuiling / TropCrop-TCS – Own work I love courgettes (a.k.a zucchini) and they generally go on sale quite often or you may find them on the reduced rack. Keep an eye out for green and yellow zucchini as most people tend to know more about the green then they do the […]

Popcorn Chicken Salad Lettuce Wraps

DRESS UP YOUR CHICKEN SALAD   If you are a lover of Chicken Salad you will enjoy this unique twist on traditional chicken salad with the addition of popcorn served inside a lettuce wrap. What if I said to you, that you could bring a new kind of pop to your dinner table? What if your last bag of air-popped popcorn could be the highlight of your next potluck party? I know lots of questions BUT it’s leading somewhere delicious I promise you. I’m talking about enjoying Popcorn Chicken Salad in a lettuce wrap. It doesn’t get any easier and than that and it’s a light dinner. We were first introduced to this popcorn chicken salad by our neighbour and we were no, popcorn is for the movies or at home to watch your favourite program. That’s just not heard of. Popcorn chicken isn’t what you are thinking either. It’s not like the popcorn chicken you get at Kentucky Fried Chicken. It’s a moist chicken that is full of flavour and not deep-fried. There’s no harm in trying something new like I’ve done with this popcorn chicken salad. I like to serve our popcorn chicken salad exactly like the photo […]

Family Dinner Ideas That Won’t Chop Your Budget: The Grocery Game Challenge #4 Mar 23-29, 2015

HELP IN THE KITCHEN WITH MEALS   I don’t know about you but having to cook every single night apart from the odd times we go to a restaurant can be tough when you need to come up with dinner ideas on a limited budget. Add in a kid or two to the mix and you’ve got to think fast if you don’t already have your meal plan ready for the evening. We like to create meals that are fast which means 30-minute meals are a plus in our kitchen. Meal prep goes a long way so sometimes less is better when it comes to week-night dinners and the amount of ingredients you use. Save those hearty, complicated dinner ideas that take hours to cook for the weekend or for days you’re not working. This way you have more time to dedicate to the meal rather than having to rush. One of the greatest successes of being organized is that if you are in charge of the kitchen and grocery shopping you know that meal planning and lists are VERY important. I often get fans asking me and visiting the blog looking for meals that aren’t too heavy on the […]
