Baked Frittata with Mozzarella and Fennel Greens (Low-Carb)

NUTRITIOUS EGGS ARE INEXPENSIVE AND GOOD ANY TIME OF DAY   Ever since my wife started making changes to her diet to incorporate the low-carb methodology we’ve been working on new recipes like this baked frittata with mozzarella and fennel greens also known as fennel fronds. If you have never tried fennel before you must dive in and spend the few dollars  to buy one. Fennel is crunchy like celery but has an anise flavour too it that is gorgeous to eat raw, in salads or you can roast, grill and saute it. For this baked frittata recipe I only used the fennel greens as opposed to just the fennel bulb since most people don’t know what to use the fronds for and toss them in the garbage. You can use the fennel fronds to infuse water to make a healthy tea, fennel infused oil, stuffed in fish or to make a lovely soup stock. HOMEMADE SOUP IS NOT JUST FOR WINTER   If you love cream based soups and have extra celery kicking around the refrigerator that needs using up this cream of celery soup will wake up your taste-buds and surprise your wallet. AN EASY DINNER THAT HITS THE SPOT   The hot new low carb substitute for mashed potatoes is cauliflower. Cauliflower mash is buttery, creamy and delicious plus you can hardly tell that it’s not mashed potatoes especially if you’re trying to fool fussy eaters. Since cauliflower has come down in price from over $6 a head down to a reasonable $2.99 each or 2/$5.00 it’s worth experimenting once again. Fire-Roasted Red Pepper Soup with Tomato and Fennel

40-MINUTES AND SOUP IS ON THE TABLE   I’ve always been a huge fan of roasted red peppers especially with hot homemade bread slathered with butter. I’m also a huge lover of soup so I thought why not combine the two with tomatoes and fennel to create this hearty Roasted Red Pepper soup with tomato and fennel. It’s after the snow starts to fall that we get into that ‘warm me up mode’ and have soup on the brain. My favourite soup is a bean-filled tomato minestrone but I also love simple broth soups or quick and easy soup like this roasted red pepper soup. Starting Our Frugal Garden From Seed

Gardening for some is a passion and for others just another chore. For me, enjoyment of watching something grow, mature and flower is fascinating. Plants don’t all have to be about huge flowers, they can be the focus or the backdrop or just plain useful. Every year we grow our own food in the garden, though I’ll be the first to admit we couldn’t live off the land we have, it’s more of a novelty thing. There are advantages other than cost to growing your own, the flavours are far superior and the knowledge that you didn’t spray everything in sight with chemicals. I can remember when I was growing up in England that quite a lot of people had apple trees in their back gardens the obligatory rhubarb patch as well as a sprinkling of gooseberry bushes, damson trees and in rough open space you could find blackberries by the thousand. Coming home from school at a young age we would often scoff free damsons off some old ladies tree. I do believe it was called “scrumping”, though that term is more synonymous with stealing apples off a tree.
