Winter White Chocolate Coconut Macaroons (Low Carb) (Sugar-Free)

INEXPENSIVE LOW CARB SWEETS TO HAVE ON HAND IN THE FREEZER.   Mrs.CBB and I were working on low carb baking ideas that we could make for the holidays when we decided to create one of my favourites, coconut macaroons. Many moons ago when Mrs. CBB was working at Tim Hortons she remembers making coconut macaroons and dipping them in milk chocolate. That was part of her role when she worked the night shift with the baker back when they used to make donuts, cookies and muffins fresh in the restaurant. Chocolate coconut macaroons were an everyday cookie on the popular coffee shop menu and were sweet, chewy and had a crunchy exterior. Mrs. CBB said it was also hard to resist just eating one. My challenge was to recreate coconut macaroons but a sugar-free and low carb version. When I lived in the UK I used to make the sweet version of coconut macaroons because they were delicious and inexpensive to make. THE SMELL OF ROASTED ALMONDS AND HEALTH BENEFITS ALONE ARE WORTH THE COSTS.   Almonds are the new Super Food along with just about every other nut on the market according to packaging at the grocery store. Why? Nuts are full of nutrients and come packed with plenty of health benefits. Almonds also known by the Indian name “Badam” and are packed full of nutrients including vitamin E which is great for your hair, skin, digestive track and cholesterol levels. Years ago Mrs. CBB and I went into an Indian store in Brampton and purchased a bottle of Almond oil to use on her hair and skin. It’s amazing how  lovely and soft it made her hair. I suggested that she try almond oil only because I’ve been to India a couple of times and almond oil is used everywhere for beauty and cooking.
