Low Carb LCHF Cream Cheese Lemon Pound Cake

ENJOY A SLICE OF LEMON HEAVEN   If you’re looking for a low carb, sugar-free, grain-free, gluten-free cream cheese lemon pound cake then you’ve clicked on the right link because even I can’t tell it is low carb and polished off a few slices. Creating low carb dessert recipes for my wife to enjoy can be challenging but once you understand how the ingredients work together easy low carb desserts can be brought to life. Creating recipes is about experimenting which can be fun even if your recipe doesn’t turn out as planned. I’m no pastry chef and working with flour that contain no gluten, eggs, butter, coconut oil and cream cheese to re-invent the pound cake took some trial and error. With my wife’s birthday this month I wanted to create a low carb pound cake since it’s her favourite type of cake. She loves how a traditional pound cake is dense and perfect for dipping in coffee or milk. It has been almost one year since she’s given up sugar, grains and most fruits and vegetables to lead a low carb lifestyle. She loves this way of eating, feels great and has lost all the weight she gained […]

Guilt-Free Crispy Deep-Fried Pickles (Low-Carb)

LOW-CARB SNACK TIME DOESN’T GET ANY EASIER THAN THESE CRUSTED DILL PICKLE CHIPS.   This is the recipe for deep-fried pickles that you don’t want to turn away from especially if you’re a dill pickle fan and not interested in the extra carbs from thick batter. The first time Mrs. CBB and I had deep-fried pickles was when she was about 6 months pregnant and we stopped off for dinner at a Fish n’ Chips dive in town. The restaurant was empty as it was the end of the night so we were guaranteed hot n’ fresh which is what I like. While looking over the menu Mrs.CBB noticed they offered deep-fried pickles. She was like a little kid all excited so we ordered a plate as an appetizer. I wasn’t a huge dill pickle fan but my wife goes mad for them. I was a changed man when I tasted the deep-fried pickles dipped in mayonnaise sauce. Not only were the deep-fried pickles good but I ate some of the best fish n’ chips since arriving in Canada almost 9 years ago. Growing up in the UK fish n’ chips is a big deal so now we have a […]

Crispy Italian Eggplant Parmigiana Appetizers (Low-Carb)

EMBRACE YOUR SUMMER EGGPLANT HARVEST WITH BOLD FLAVOURS   My easy eggplant parmigiana appetizers are full of buttery Parmesan flavours and perfectly matched with fresh basil, buffalo mozzarella and sour cream. For anyone who is on a low-carb diet these eggplant parmigiana appetizers must end up on your weekly menu plan. Not only are eggplants budget-friendly but this recipe quick to make when you’re in a rush or have unannounced company. When you are cooking two different types of meal plans like in our house delicious, quick recipes are welcomed.   Don’t be afraid of produce you haven’t cooked with before   Unless eggplant is a staple in your diet most people turn their noses up at it. Lack of understanding about cooking eggplant may push people away. Eggplant is unique for its awkward egg shape, deep purple colour. Eggplant is spongy and soaks up flavours which you will want to add to your eggplant dishes. I had no idea how to cook eggplant nor did I have any eggplant recipes under my belt. I was shown how to make eggplant parmigiana for a dinner party a few years back by my father-in-law. Italian eggplant dishes revolve around casserole creations […]

Creamy Bacon Tomato Salad (Low-Carb)

ORGANIC PRODUCE HAS SOME OF THE BEST FLAVOURS IN THE WORLD   I wasn’t sure if I should call this recipe Tomato Bacon Salad or Bacon Tomato Salad so I went with both only because there’s lots of cherry tomatoes and tonnes of bacon! There’s no pasta or bread in this creamy Bacon Tomato Salad that I’ve created from organic vegetables and herbs from the garden. All you need is a fork, an appetite for freshness and a love for tomatoes and bacon. My wife who enjoys a low-carb/Paleo diet said she was in the mood for a bacon tomato sandwich loaded with mayonnaise on oopsie bread or savoury low-carb waffles. The Oopsie bread and waffles are alternatives to adding extra carbs from eating traditional breads but we didn’t have any made. I’m not a fan of the oopsie bread but when you stop eating bread anything that looks and tastes like bread is a sure winner. Related: Grocery Shopping for a Paleo Diet With the humidity and heat in Ontario reaching unbearable highs turning on the oven was the last thing we wanted to do. We were fortunate enough to get a huge bowl of organic cherry tomatoes from […]

Extra Juicy Chicken Avocado Burger (Low-Carb)

This Is Not Your Ordinary Chicken Burger Recipe. It’s The Best, The Juiciest, The Easiest Burger You’ll Ever Make.   The Chicken Avocado Burger is probably one of the juiciest burgers we make in the CBB house because of a secret ingredient and grilling technique that you must know about. I’m a huge fan of the beef burger and I have secrets up my sleeve to create the perfect beef burger however every once in a while I like a different protein like turkey or chicken in place of beef. Although beef prices have slowly been coming down in Canada it’s still cheaper to find chicken and turkey mince for a fraction of the cost. I can get 2lbs of chicken mince for $12 where beef would cost me $21. The price difference is hefty for anyone on a budget but what you can create with a wonderful mince is by far the best part of all. Keep in mind when you are grocery shopping that buying a 1lb pack of mince that will make 4 large burgers such as this chicken avocado burger recipe that it becomes relatively inexpensive compared to eating out at a restaurant. Back a few […]

Unreal Creamy Avocado Chocolate Pudding

NO ONE WILL KNOW THAT YOUR SECRET INGREDIENT IN THIS AMAZINGLY SIMPLE DESSERT IS A HEALTHY AVOCADO!   Who knew that you could make desserts with avocado and the best part is no one will know your secret unless you tell them. I could be here all day naming the types of sweet treats that include avocado but one of our favourites is this creamy avocado chocolate pudding that will wow just about anyone who eats it. Avocados are showing up in all kinds of dessert recipes from chocolate avocado brownies avocado smoothies avocado mousse avocado cookies and cakes I created this easy chocolate pudding recipe for my wife since she is on a high-fat low-carb diet and occasionally likes something sweet to indulge in. We had a slightly sweeter version of an avocado chocolate pudding at a dinner party we attended at our neighbours house a few years back. We were in awe that the entire pudding was made from avocado! Shocked doesn’t begin to describe our reaction as it tastes exactly like regular chocolate pudding. What I like about this avocado chocolate pudding is that you can whip it up while your guests are having a chat or […]

The Perfect Vanilla Ice-Cream Sandwich (Low-Carb)

A HOMEMADE SUGAR-FREE TREAT THAT IS LOW-CARB AND PERFECT WHEN YOU CRAVE SOMETHING SWEET   My wife was in the mood for something sweet the other night and kept bugging me to help her create a vanilla ice-cream sandwich treat for the summer. I got to work making the cookie base for the vanilla ice-cream sandwich which wasn’t easy and took me a few tries. The tender cookies don’t take long to make however it’s the batter consistency that you need to watch out for. The cookie batter should look frothy and not dense. When I eat an ice-cream sandwich I don’t want to have a hard cookie base. You expect to bite into an ice-cream sandwich where your teeth sink through the soft cookie, into the ice-cream and again through another cookie. I am not a fan of the ice-cream sandwich with the hard cookie as I find the ice-cream squashes out too easily and a big mess is born. Don’t get me wrong they taste good and I wouldn’t turn one down but for my wife I knew that being on a low-carb diet that most cookies that we create do come out of the oven moist. The […]

Crispy Parmesan Crusted Baked Zucchini Chips (Low-Carb)

GET YOUR CRUNCH ON WITH THESE EASY TO MAKE BAKED ZUCCHINI CHIPS!   When we found out that we could use baby zucchini to make chips right away we knew we wanted to try it out for ourselves. The final verdict wasn’t as crispy as we had thought but we perfected them so now they are the perfect Crispy Parmesan Crusted Baked Zucchini Chips. Baked chips can be just as delicious as chips that are deep-fried in oil. By all means you could deep-fry these zucchini chips to get a crisper texture if you prefer them that way. When should you buy zucchini? Anytime is a good time but if it’s price point you are after always stick to fruits and vegetables that are in season. If you are at the grocery store especially in the Spring and Summer you will find baby green zucchini for a great deal. Most times we can find it for about $0.99lb which is a great price apart from growing it yourself. My father-in-law grows zucchini throughout the summer and my mother-in-law makes gorgeous zucchini fritters that we dip in maple syrup. I’ll make that recipe for all of you once we get some […]
