Dark Chocolate Peanut Butter Cups (Low-Carb, Sugar-Free)

HOMEMADE SUGAR-FREE PEANUT BUTTER CUPS THAT SATISFY   You’re looking at a dark chocolate peanut butter cup recipe that is so good you can’t even tell they are a low-carb, sugar-free treat. If you enjoy a low-carb lifestyle and are craving something sweet these chocolate peanut butter cups will cure all. I don’t always eat low-carb and it was hard for me to stop at eating just one of these beauties which are similar to Reece’s Peanut Butter Cups that you can buy at just about every shop. I’m not even a huge peanut butter fan as I didn’t grow up on it like my wife did but when you mix it with chocolate something magical seems to happen. Ya, you know what I mean. My wife and I made these about 3 weeks ago now after she was in serious need of fulfilling her sweet tooth after dinner. Over Christmas we make a chocolate peanut butter ball recipe which is famous with just about anyone we’ve fed them to. We took that concept and created the Dark Chocolate Peanut Butter Cups but we made them in large size muffin liners re-create the Reece’s Peanut Butter Cup. A nice chocolate […]

10 Affordable Meatless Meals To Help Shrink Your Grocery Bill : The Grocery Game Challenge 2016 #1 May 2-8

BALANCE THE MEAL PLAN TO HELP BALANCE YOUR BUDGET   Meatless meals have become a regular on our menu plan not only for the savings but because we enjoy the simplicity of a veg dish with simple alternate proteins other than meat and fish. That might sound a bit awkward to someone who doesn’t use a grocery budget but for our family a budget is essential to keeping us accountable for the food that we purchase.   Meatless meal day is any day   If you aren’t already aware there is a day dedicated to meatless meals and that day is Monday. Just because it sounds good though doesn’t mean you are required to forgo meat on a Monday. After a weekend of comfort food with the family a Meatless Monday is a nice way to start the week but it’s also a nice way to end the week or slow it down in the middle. What I love about ditching the meat once or twice a week is that I can batch cook easy meatless meals and enjoy leftovers the next day. I’m not a huge fan of re-heated meat especially if it is a steak, chicken, roast […]

Baked Frittata with Mozzarella and Fennel Greens (Low-Carb)

NUTRITIOUS EGGS ARE INEXPENSIVE AND GOOD ANY TIME OF DAY   Ever since my wife started making changes to her diet to incorporate the low-carb methodology we’ve been working on new recipes like this baked frittata with mozzarella and fennel greens also known as fennel fronds. If you have never tried fennel before you must dive in and spend the few dollars  to buy one. Fennel is crunchy like celery but has an anise flavour too it that is gorgeous to eat raw, in salads or you can roast, grill and saute it. For this baked frittata recipe I only used the fennel greens as opposed to just the fennel bulb since most people don’t know what to use the fronds for and toss them in the garbage. You can use the fennel fronds to infuse water to make a healthy tea, fennel infused oil, stuffed in fish or to make a lovely soup stock. The sky really is the limit if you love the flavour of fennel fronds when cooking and adding it to your favourite recipes. How to clean fennel When I use the fennel bulb I chop the tough stems like cabbage after I slice the fennel […]

Cauliflower Mash Cottage Pie (Low Carb)

AN EASY DINNER THAT HITS THE SPOT   The hot new low carb substitute for mashed potatoes is cauliflower. Cauliflower mash is buttery, creamy and delicious plus you can hardly tell that it’s not mashed potatoes especially if you’re trying to fool fussy eaters. Since cauliflower has come down in price from over $6 a head down to a reasonable $2.99 each or 2/$5.00 it’s worth experimenting once again. One of my favourite cauliflower recipes is my baked cauliflower with cheese as a side dish to roast beef or any other protein.   How to make cauliflower mash   Creating cauliflower mash is very easy so don’t let any of the many names fool you as they are all the same thing: Smashed cauliflower Mashed cauliflower Cauliflower puree Cauliflower mashed potatoes (there is nothing potato about this recipe but some people need to call it mashed potatoes to help describe what it is that you will be eating). How long should you boil the cauliflower? I make sure to chop my cauliflower into small florets so they cook faster. You’re going to mash it all up anyways so it doesn’t really matter at this point. The key is to keep […]

Mozzarella Bacon Bomb Lettuce Wrap Dippers (Low Carb)

CHEESY BACON FLAVOURS BURSTING IN YOUR MOUTH!   Get ready to experience these Mozzarella Bacon Bomb Lettuce Wrap Dippers! These little beauties packed with flavour are the perfect party food or starters for a dinner party and they won’t cost you a fortune like other appetizers will. When my wife had this idea to fry frozen mozzarella I thought she was on to something good especially when she said we were going to wrap the sticks in bacon. Ketogenic recipes for low-carb diets are what we are testing out these days although we tend to change them to suit my wife’s tastes. She is a huge fan of spices but since eating bacon is a big deal on the Atkins low-carb diet she no longer uses salt at all. Recipes with bacon always turn out good no matter what and that’s the truth. Bacon can do no wrong and pretty much will match up with just about anything. I’ll admit these Mozzarella Bacon Bomb Lettuce Wraps really were hard for me to stop eating even though they weren’t for me. In total one of these Mozzarella Bacon Bomb Lettuce Wraps come in at around 1.50g net carbs each according to […]
