The Perfect Vanilla Ice-Cream Sandwich (Low-Carb)

A HOMEMADE SUGAR-FREE TREAT THAT IS LOW-CARB AND PERFECT WHEN YOU CRAVE SOMETHING SWEET   My wife was in the mood for something sweet the other night and kept bugging me to help her create a vanilla ice-cream sandwich treat for the summer. I got to work making the cookie base for the vanilla ice-cream sandwich which wasn’t easy and took me a few tries. The tender cookies don’t take long to make however it’s the batter consistency that you need to watch out for. The cookie batter should look frothy and not dense. When I eat an ice-cream sandwich I don’t want to have a hard cookie base. You expect to bite into an ice-cream sandwich where your teeth sink through the soft cookie, into the ice-cream and again through another cookie. I am not a fan of the ice-cream sandwich with the hard cookie as I find the ice-cream squashes out too easily and a big mess is born. Crispy Parmesan Crusted Baked Zucchini Chips (Low-Carb)

GET YOUR CRUNCH ON WITH THESE EASY TO MAKE BAKED ZUCCHINI CHIPS!   When we found out that we could use baby zucchini to make chips right away we knew we wanted to try it out for ourselves. The final verdict wasn’t as crispy as we had thought but we perfected them so now they are the perfect Crispy Parmesan Crusted Baked Zucchini Chips. Baked chips can be just as delicious as chips that are deep-fried in oil. By all means you could deep-fry these zucchini chips to get a crisper texture if you prefer them that way. When should you buy zucchini? Anytime is a good time but if it’s price point you are after always stick to fruits and vegetables that are in season. If you are at the grocery store especially in the Spring and Summer you will find baby green zucchini for a great deal. Most times we can find it for about $0.99lb which is a great price apart from growing it yourself.
