White Chocolate Cherry Muffin

FRESH FRUIT MUFFINS   I’ve never made a white chocolate cherry muffin before but since I had the ingredients on hand I thought I’d get creative with fresh cherries. I am happy I did because they turned out so moist but not sugary like most commercial muffins. I enjoy making white muffins once in a while adding in fresh fruits that I have on hand. One of my favourite white muffins is the blueberry muffin and on occasion I splurge making chocolate chip muffins. Muffins have long since been a favourite as a breakfast muffin or even a snack muffin. I’m pretty sure many of you would rather reach for a muffin over a donut for breakfast but be careful as they are not all created equally in terms of calories and fat content. HOT FROM THE OVEN MUFFIN   I love muffins of any kind even at breakfast and they are so easy to make that if you have kids you can get them involved with the process.   If you are one of those people who makes their morning stop off at Tim Horton’s for a coffee and a muffin, you don’t need to. It’s not only lighter on the wallet if you make your coffee at home but any of the muffins they offer are so easy to make in your own kitchen. With a few ingredients you can make a mountain of muffins that just tumble into you mouth at any time of day or night. WHEN STRAWBERRIES ARE IN SEASON YOU’LL WANT TO ENJOY INCLUDING THEM IN AN ARRAY OF DELICIOUS SWEET RECIPES   Forget about learning how to make a strawberry cheesecake when you can make these strawberry cheesecake streusel muffins to satisfy your sweet tooth. I found this strawberry muffin I created to be a dense white muffin with the amount of eggs I used but moist because of the yogurt. I used the same muffin base similar to my white cake batter that I use for other cakes as I wanted it to hold the strawberries without making the muffin soggy. If you like desserts with strawberries, you might just fancy this strawberry muffin because it’s one of those easy strawberry desserts that don’t take hours to set or cool to enjoy. It’s not often we get strawberries in our house, fresh ones at that and since we had tubs of cream cheese in the refrigerator we got to work in the kitchen. Mr.CBB’s Pumpkin Spice Pound Cake With Brown Butter Buttercream

Pumpkin was not something I grew up with in the UK as my mum never really served pumpkin pie or pumpkin anything for that matter. It wasn’t until I moved to Canada and my mother-in-law served me pumpkin cheesecake that I was first time I was introduced to the unique flavour in a dessert. Over the years I tasted pumpkin pie, pumpkin scones,pumpkin cookies, pumpkin cheesecake and pumpkin bars all of which tempted me to create my pumpkin spice pound cake recipe this Fall. When the leaves begin to fall and the colours turn there’s something special about the Fall scenery, big bright orange pumpkins and warm Fall spices fill the air. We not only decorate the front of our house with pumpkins and corn stalks we now aim to create our own tradition for the season using this gourd-like squash better known as winter squash. Mr.CBB’s Creamy Apple Caramel Harvest Muffins

CARAMEL STUFFED APPLE MUFFINS AND A CUPPA TEA   Apples are in abundance during the Fall season in Ontario which means creating new recipes that will make everyone drool like these Apple Caramel Harvest Muffins. There is something nostalgic about the Fall and the smell of cinnamon, apples and nutmeg swimming in the air. Standing in the kitchen I can close my eyes and take a deep breath and it reminds me of when I was a child and my mother would bake on Sunday mornings. Mrs.CBB and I don’t typically buy baked goods at the shop because what we do like we make at home for a fraction of the cost most times. The best part is we know the ingredients we are putting inside and can control the amount we make. These apple caramel harvest muffins are not low-fat but has all-natural ingredients from your pantry and refrigerator.
