If you’re looking for an amazing potato salad this Country-Style Radish Potato Salad has everything you’re looking for BUT without the high-carb starchy potatoes.
You’ll find this low-carb radish potato salad has all the same flavours as an old-fashioned potato salad but without the high carbohydrate count and starch that comes along with it. For every 100 grams of red radishes you will get 3.4 grams of carbs, 1.6 grams of dietary fiber and 1.9 grams of natural sugar.
Best of all, only 16 calories and if you are on a keto diet and minus the fiber content your net carbs are even lower. 3.4g-1.6g=1.8 grams net carbs per 100 grams.
That’s not bad considering 100 grams of potatoes has 17 grams of carbohydrates!
What are red radishes?
The radish is an edible root vegetable of the Brassicaceae family that was domesticated in Europe in pre-Roman times. Radishes are grown and consumed throughout the world, being mostly eaten raw as a crunchy salad vegetable.- Wikipedia
Red radishes are high in fiber, Vitamin C and low in calories and carbohydrates and in season during the spring and summer months. If you’d never had red radish before they are round or oval, 1-5 inches in diameter with a crunchy white flesh and a spicy undertone which quickly goes away.
The common red radishes we find at the grocery store have long been popular sliced to go inside a garden salad, raw on a vegetable platter with dip or cooked in various recipes.

Radish leaves also known as radish greens are nutritious and perfect sautéed with some olive oil and garlic, tossed in salads or used in any other way that you enjoy greens.

If you are looking to store radishes of the red variety look no further than the crisper drawer in your refrigerator. A small bag of red radishes lasts us about a week and we take them as needed, clean and use them.
How to make Radish Potato Salad
If you’ve made classic potato salad before then you do the exact same thing except you sub in boiled and chilled red radishes for your potatoes. It’s really that easy. I’ve chosen to add all the delicious flavours of a traditional potato salad plus a bit of red cabbage for crunch.
Wash and clean your radishes by chopping off the end bits which can get gritty and boil them just until tender then run under cold water. You may be wondering what they will look and taste like once you’ve boiled them and the answer is, a bit different.
The red colour is hardly noticed and the peppery taste is slight with no crunch obviously making radishes the perfect alternative for potatoes for a low-carb diet. If you don’t want to boil the radishes you can poach them instead to eliminate excess water getting into the radish but we found them to be perfect this way too.
Once the radishes are chilled in the refrigerator you can start to add all of your radish potato salad ingredients and you’re done. Some people like a warm radish potato salad and you can do that as well by not refrigerating the radishes and adding the ingredients while they are warm.
We like to refrigerate our radish potato salad for an additional hour to chill and let the ingredients come together. You don’t have to do this but it’s our preference.
That’s it…how easy is that?

- 1lb red radishes washed and trimmed
- 1 cup real mayo (add more if needed)
- 1 teaspoon salt (add as needed)
- 1 teaspoon fresh cracked black pepper
- 1 teaspoon paprika
- ½ teaspoon onion powder
- ½ cup chopped celery
- ½ cup sliced red cabbage
- 2 spring onions chopped fine
- 4 hard-boiled eggs sliced
- 2 medium pickles chopped small
- 2 teaspoons Dijon mustard
- bunch of fresh parsley chopped about ⅓ cup
- 4 or 5 basil leaves rolled and chopped fine
- 2 tablespoons apple cider vinegar
- In a pot of salted cold water add your cleaned red radishes cut in half and boil until just tender about 5-6 minutes on medium-high heat.
- Drain and run under cold water then refrigerate to chill
- While the radishes are chilling you can prepare the rest of the ingredients in a large bowl then add the radishes and mix gently until combined.
- That's it!!
- Chill or enjoy as is.
