You’re probably wondering why it’s called a coffee cake when there is no coffee in the cake.
I didn’t understand it either when I first learned about a coffee cake, but I think of it as a snack cake.
You’ll get a small piece of cake instead of a whopping big slice. However, you’re free to eat the entire pan or cut portions as you see fit.
Let me show you how I made this easy coffee cake recipe.

Although, you can double the recipe and use a larger baking pan as described below in the infographic.
Typically, if we go to a gathering, I will make a larger pan based on the number of guests.
This cake also doubles as a great lunchbox snack cake to send with children to school or take to work.
After school, our son plays at the park, and one of the daycare moms had this cinnamon swirl cake.
She told me that the kids love this cake, and it’s budget-friendly since there are not many ingredients.
When I heard her say the word budget, I knew this was the type of cake I’d enjoy after dinner.

- 1 large red apple is peeled and cubed to be folded into the batter at the end.
- 1 large egg
- Pinch of salt
- ½ cup of white sugar
- 2 tablespoons avocado oil
- 1 tablespoon of pure vanilla extract
- 11/4 cups of white granulated sugar
- 1 tablespoon baking powder
- ¾ cup of whole milk or 2% milk
- ¼ cup of brown sugar
- 1 tablespoon cinnamon

How To Make Apple Cinnamon Coffee Cake
Preheat the oven to 350 degrees (180C), then grease and line a 9×9 parchment-lined baking pan.
I use a large baking bowl and mix all of the ingredients apart from the apple in 3 steps.
First, I add all of the wet ingredients, oil, egg, and white sugar, then mix for a minute until combined.
Add all the dry ingredients into the bowl of mixed wet ingredients and mix for a minute until combined.
Lastly, I fold the apple chunks into the batter and pour them into a greased 9×9 parchment paper-lined baking pan.
Before putting the cake in a 350-degree preheated oven, I sprinkle cinnamon sugar over the top to give it a cinnamon bun cake look.
Bake the cake for 30 mins or test the middle of the cake with a toothpick at 25 minutes.
Other Cake Topping Options
I probably could have called this a cinnamon apple fritter cake, but that’s the flavour profile to expect.
When the cake was ready, I cut snack-size pieces and added a dollop of Greek Yogurt over the top.
If you want to get gooey, go ahead and poke holes in the apple cinnamon cake.
Make a simple and super easy homemade caramel sauce.
Drizzle part of the hot caramel over the apple cinnamon cake, so it permeates the poke holes.
Wait a few minutes and repeat the process with the other half once the caramel. Delicious.
Lastly, you could sprinkle chopped walnuts over the top of the frosting or caramel to add texture.
