Mr.CBB’s Pumpkin Spice Pound Cake With Brown Butter Buttercream

Pumpkin was not something I grew up with in the UK as my mum never really served pumpkin pie or pumpkin anything for that matter. It wasn’t until I moved to Canada and my mother-in-law served me pumpkin cheesecake that I was first time I was introduced to the unique flavour in a dessert. Over the years I tasted pumpkin pie, pumpkin scones, pumpkin cookies, pumpkin cheesecake and pumpkin bars all of which tempted me to create my pumpkin spice pound cake recipe this Fall. When the leaves begin to fall and the colours turn there’s something special about the Fall scenery, big bright orange pumpkins and warm Fall spices fill the air. We not only decorate the front of our house with pumpkins and corn stalks we now aim to create our own tradition for the season using this gourd-like squash better known as winter squash. Today I present to you a recipe that I created using pumpkin purée and seasonal spices such as nutmeg, pumpkin spice, cinnamon and all-spice. I created a rich buttery homemade pumpkin spice pound cake and topped it with a brown butter pumpkin spice butter-cream. I made this in a tube pan as well as a muffin tin but you could also […]

Mr.CBB’s Creamy Apple Caramel Harvest Muffins

CARAMEL STUFFED APPLE MUFFINS AND A CUPPA TEA   Apples are in abundance during the Fall season in Ontario which means creating new recipes that will make everyone drool like these Apple Caramel Harvest Muffins. There is something nostalgic about the Fall and the smell of cinnamon, apples and nutmeg swimming in the air. Standing in the kitchen I can close my eyes and take a deep breath and it reminds me of when I was a child and my mother would bake on Sunday mornings. Mrs.CBB and I don’t typically buy baked goods at the shop because what we do like we make at home for a fraction of the cost most times. The best part is we know the ingredients we are putting inside and can control the amount we make. These apple caramel harvest muffins are not low-fat but has all-natural ingredients from your pantry and refrigerator. It’s a treat muffin that you would have once in a while and the best part is that it is homemade. So these apple caramel harvest muffins had no name as of yesterday so I took to my Facebook Fan Page and asked the fans to post a name for this […]

Mr.CBB’s Mum’s British Lemon Fridge Cake

This Lemon Fridge Cake has been passed down the ranks in my family from my grandma all the way to my mum and now us kids. She would make it for any special occasion as did my grandma and I distinctly remember the smell of lemon permeating our house. Most often it was made for Birthday’s, Christmas and Easter but we could devour it any time of year. Growing up one of 3 children my mum was a stay at home mum and was always mixing something up in the kitchen. If you couldn’t find mum she was in the kitchen with her white apron tightly drawn around her mincing, rolling, stirring and testing something new. There were no boxed cakes in our house as my mum always wanted to create new recipes. Likely why I am so passionate about being in the kitchen. It was great to have my mum at home and I learned just as much from her in the kitchen as I did from my dad about repairs to the house and vehicles. The tartness of the lemon in this cake will please the lemon lover in anyone. The whipped cream balances out the sweetness of […]

Mr.CBB’s Eggless Chocolate Coffee Cake $6.50

Eggless Chocolate Coffee Cake… for real you can make a moist chocolate cake without eggs. I know I was just as shocked and it’s perfect! It was just the other night I had a hankering for chocolate and I was tempting myself to head to the kitchen to make my Mr.CBB’s Fudgy Brownies. Although my Facebook Fans motivated me to get up and bake I decided to wait a day as it was a bit late. Then during a Facebook conversation 2 fans Christine Weadick and Sarah Jackson started talking about allergies and eggless cakes. Sarah’s little one is allergic to eggs and was looking for some new easy eggless recipes. In comes Christine to the rescue with her easy eggless chocolate cake recipe. This is what Facebook sharing and caring is all about, two people who come together to help each other out.   Eggless Chocolate Cake Christine went on to post her favourite eggless chocolate cake recipe you can find it posted on my timeline on Facebook) and I was intrigued with it. The next evening I made the chocolate cake and it turned out lovely. It was a bit heavier than normal cakes but moist and delightful. […]

Mr.CBB’s Oatmeal Chocolate Chip Raisin Cowboy Quickies!

If you are in the mood for cookies, try my cowboy quickie cookies filled with oatmeal, chocolate and butterscotch chips and raisins. Seems like a lot but it’s worth every bite especially if chocolate goodness is what you are dreaming of for your sweet treat of the week. I woke up this morning went for a jog in the light rain then came home and felt like something… well, sweet! Since the Mrs. was still sleeping I decided to check our freezer inventory list to see if we still had chocolate chips. I wanted to make a signature cookie for Canadian Budget Binder sort of like the recipe mascot for the blog although it’s in a tight competition with my fudgy brownie recipe that’s loaded with chocolate and walnuts. I must admit I enjoy baking cookies and have done it since I was younger as we helped me mum in the kitchen. I was always wanting to learn from me mum and dad. I found it rewarding when I was able to help or replicate something that they had taught me.  This cookie I’m afraid is the works of my imagination and frankly it turned out pretty darn good. If you want […]
