Creamy Chicken Pot Pie

A hot chicken pot pie is simple to make and uses up all of the leftover vegetables in your refrigerator to eliminate any food waste.

Serves: 6-8
  • 1 pack chicken drumsticks (15) - You can use cooked chicken around 11/2 lbs or 2 chicken breasts
  • 1 stock cube (if using own chicken stock use 1 cup)
  • 2 cups warm milk
  • 2 teaspoons cornstarch
  • 1 tablespoon olive oil
  • 1 teaspoon butter
  • 1 pack puff pastry
  • Vegetables optional
  1. Cook drumsticks in the oven for 45 minutes or until fully cooked.
  2. Once cooked clean all the meat off the bones. (set skin and bones aside to make stock)
  3. Chop up vegetables if you are adding any.
  4. Add olive oil and butter to the pan and put onto high
  5. Place chicken into pan, brown slightly
  6. Mix milk, stock cube and cornstarch together and add to the chicken.
  7. Bring to the boil and stir until thickened.
  8. Turn heat down and let simmer. Add vegetables (optional)
  9. Note: If you find sauce to runny just add a bit more cornstarch. Vice-versa if it's too thick add more milk.
  10. Empty pan into pie dish
  11. Roll out dough so that it overlaps pie dish
  12. Note: You can add an inside crust to pie dish see link below. You need to eliminate the sugar and add ½ teaspoon of salt

  14. Carefully place the pastry over your dish and cut any excess away from the side. Any spare bits of pastry can be used to decorate pie.
  15. Glaze your pie with some milk and place in the oven for 30 minutes or until the pastry has puffed and turned golden brown.
