Pineapple Rice
If you love the sweet taste of pineapple and you enjoy rice these two ingredients come together well in this pineapple rice dish.

Serves: 4-6
  • 1 can pineapple tidbits or chunks, drained and save the juice
  • water to cook the rice, added to the drained juice to make up your amount
  • 1-1/2 cups uncooked rice, or what ever will give you 3 cups cooked
  • ⅓ cup brown sugar
  • 2 tsp prepared mustard
  • 2 tbsp soya sauce
  • ⅓ cup chopped green pepper
  1. Bring your cooking liquid to a boil, reduce heat and add the rice stirring well.
  2. Once the rice is just cooked, add the brown sugar, mustard, soya sauce, pineapple, and peppers.
  3. Mix well and let sit for a couple of minutes to absorb any leftover liquid from the pineapple and serve.
  4. I usually let the rice sit while the sausage finish cooking and I set the table.
  5. As you are not really cooking the peppers they add a nice crunch to the dish!!
  6. I usually freeze the extra chopped peppers for the next time. They don't have to be completely thawed going into the pot, that way they still crunch some.
