Twice baked potato skins...so delicious

This is a simple potato dish that anyone can make for any meal of the day. It's great to take to parties as well.

Ingredients
  • 6 med-sized potatoes
  • 1 cup of shredded cheese
  • ½ cup cooked bacon
  • ½ cup onions
  • Olive Oil 2 tablespoons
  • Salt and pepper to taste
  • Filling: Bacon, onions, cheese (you can fill them with anything! but bacon is best)
Instructions
  1. Pre-heat oven to 250oC/480oF
  2. Wash potatoes leaving skins on
  3. Pierce with a fork a couple of times
  4. Wrap in kitchen towel
  5. Place in microwave oven to cook (4 medium size potatoes will cook in 10 mins)
  6. Let potatoes cool down a bit after you remove from microwave oven then cut in half and scoop out the middle.
  7. Put the inside potato you scoop out to one side and use for another dish.
  8. Place scooped out potatoes face down on a baking sheet lined with tin foil and lightly coat with olive oil and salt and pepper
  9. Place in your pre-heated oven for 20 mins
  10. Once 20 mins has passed take out and turn them over and again coat with olive oil, salt and pepper.
  11. Place potato skins back into the oven for another 20 mins
  12. Once cooked fill with cooked bacon bits, cheese and onions (onions can be cooked beforehand then all ingredients cooled and placed into a Ziploc for you to stuff your potatoes)
  13. You can essentially fill the potato skins with whatever you fancy.
  14. Place back in the oven until cheese has melted around 5-10 mins.
