Ingredients
  • 1 Cup Scalding Milk
  • ½ Cup Sugar
  • 2 Teaspoons Salt
  • ½ Cup shortening (Marg or Butter)
  • ½ Cup lukewarm water
  • 1 package active yeast
  • 1 egg beaten
  • 4-5 cups of flour
  • 2 Teaspoons Cinnamon
  • 2 Teaspoons Brown Sugar
  • 1 teaspoon Nutmeg
  • 1 Cup butter
  • 1 cup icing sugar mixed until smooth with water.
Instructions
  1. Scald 1 cup of milk and add sugar, salt and shortening and mix until melted.
  2. Put to one side and leave to go lukewarm.
  3. Meanwhile in ½ cup lukewarm water add 1 teaspoon of sugar and the active yeast.
  4. Let stand for 10 mins (keep at room temp) then stir briskly with a fork.
  5. Add to lukewarm milk mixture the softened yeast and beaten egg.
  6. Stir well.
  7. Beat in 2 cups flour. You can use electric whisk until it gets too thick to mix.
  8. Place a cup of flour onto the surface of worktop and tip out dough kneading and working in the flour into the dough.
  9. You may need another cup depending on how wet the dough is.
  10. Knead for 5 mins until smooth and shape into ball
  11. Place dough either back in bowl and cover with greased film or just turn the bowl over and cover with that.
  12. Let it sit for at least 1hr 20mins until risen and doubled in size.
  13. Punch dough down and place onto flour surface.
  14. Divide into 2 equal pieces and form each into a smooth ball.
  15. Cover and let rest for a further 10 mins.
  16. Roll out dough until large rectangle is formed.
  17. Mix together 2 teaspoon cinnamon, 2 teaspoons brown sugar, 2 teaspoons. Nutmeg and 1 cup butter until light and fluffy.
  18. Spread mixture on to dough and roll.
  19. Cut into 2inch pieces.
  20. Place onto parchment paper and press down lightly.
  21. Make sure they are close to each other as to not spread out and lose their shape.
  22. Place into pre-heated 170oC/ oven and cook for 15-20 mins or until light golden brown.
  23. Take out and mix together icing sugar and water until it forms a light paste. Cover in icing whilst still hot.
  24. Let cool and recover in icing a second time.
