Scones with blackberry apple jam and whipped cream

If you love scones you will enjoy these fluffy scones that you can fill with any preserve you like and cream. If you like to enjoy scones warmed with butter these are delightful with a hot beverage. Enjoy.

Serves: 6-8
  • 8oz Self raising flour
  • ¼ teaspoon of salt
  • ¼ teaspoon of baking soda
  • 2oz Caster sugar (granulated sugar)
  • 2 oz butter or margarine
  • 1 egg beaten lightly
  • ½ cup milk (you will not use it all as you are using this to combine to a soft dough)
  1. Sieve flour, salt and baking soda into a large bowl.
  2. Add caster sugar and mix.
  3. Now add butter and rub into mixture until it resembles fine bread crumbs
  4. Then add your beaten egg and a little of the milk at a time until it comes to a soft dough
  5. Mix using a knife for less handling of the dough as to keep it light and fluffy.
  6. Using your hands pat down the dough until you have a round of 2" in depth.
  7. Now you can either place this on parchment paper as is and have it as a round scone or cut out using a round cookie cutter or even using a knife and cut into squares.
  8. Now lightly brush to top with milk and place into the oven for 15-20mins or until they start to turn light brown in color
