Herbed Sliced Baked Potatoes

If you love potatoes you will enjoy this meatless meal of baked sliced potatoes which is the perfect side-dish for any meal.

Serves: 4-6
  • 4 large potatoes (your choice of potato)
  • 2 tablespoons olive oil
  • 2 tablespoons of dried herbs (Rosemary, Oregano, Basil, Parsley etc.)
  • Minced Garlic (optional)
  1. Pre-heat oven to 350 degrees
  2. Slice potatoes fairly thick (about 1cm)
  3. Place into large bowl, add herbs and oil
  4. Toss the potato slices until completely coated
  5. Now arrange onto baking sheet and cook for 25 minutes or until just browned and crispy
  6. Season with salt and pepper (optional)
