Cucumber Relish
If you love relish this homemade cucumber relish is simple to make and will garnish your favourite foods with lots of flavour.

  • 4 Large Cucumbers
  • 2 Tablespoons Vinegar
  • 1 cup granulated sugar
  • ½ teaspoon salt
  • ½ onion finely chopped
  • 1 lemon squeezed
  • 1 hot pepper finely chopped (optional)
  1. Cut up cucumbers roughly and place in a pan
  2. Now take the rest of the ingredients and add it to the cucumbers
  3. Bring it up to a boil then back down to a simmer stirring constantly.
  4. This will take approximately 35-45 mins until it forms a jam-like consistency. (I broke mine down a bit more by using a hand blender to chop it up a bit finer.)
  5. If you find there is too much water and it's too runny just take away some of the juice.
  6. Now spoon it into the hot jars and seal.
