If you are a mayo lover like I am give this jazzed up Garlic Basil Mayonnaise a try.
Recipe type: Dips and Sauces
Serves: 1.5 cups
  • 1.5 cups of fresh Basil( blanched and cooled)
  • 1 cup Extra Virgin Olive Oil or Light Olive Oil
  • ½ cup garlic scapes in ½ cup of Extra Virgin Olive Oil or 5-6 Garlic Cloves minced (add an extra .5 cup of oil)
  • 2 large egg yolks
  • 2 tablespoons freshly squeezed lemon juice
  • 1 teaspoon turmeric
  • 1 teaspoon of dry mustard
  • 1 teaspoon Dijon mustard
  • ¼ teaspoon Salt and Pepper to taste (adjust as needed) You can always add more but you can't take away)
  1. Blanch your fresh basil for about 20 seconds and then put into an ice bath to cool
  2. Separate your 2 large eggs and set aside your whites for another recipe
  3. In your food processor add all of the ingredients except the oil. If you use the garlic scapes remove the oil from them and combine with the other 1 cup of oil.
  4. Turn your processor on and stream the oil through the top until the mayonnaise mixture is nice and thick. It shouldn't take too long at all.
  5. Adjust salt and pepper flavours as needed.
  6. Refrigerate up to 3 days.
