Simple Italian Tomato Salad...Buono!

Italian Tomato Salad is a refreshing salad that will pair nicely with just about any protein and perfect for the BBQ table at your summer party.

  • 2 large organic tomatoes
  • 3 cloves minced organic garlic
  • ¼ cup sliced red onion
  • ½ cup minced fresh basil
  • ¼ cup extra virgin olive oil
  • ⅓ cup cubed Parmigiano Regianno Chunks
  • ⅓ cup Genoa salami chunks
  • ½ ripe avocado chunks
  • salt and pepper to taste
  • optional: 1-2 tablespoons of Balsamic vinegar or red wine vinegar
  1. Wash your tomatoes and dry them then cut into sections
  2. Add in your minced garlic, red onion, olive oil, salt, pepper, fresh basil and mix gently
  3. Set aside covered for about 1 hour so the flavours come together
  4. Before serving add chunks of Genoa Salami, Avocado and Parmigiano Cheese and lightly stir in before placing on serving platter
  5. Make sure you have lots of crusty Italian bread to dip in the juices!!
