Creamy Cauliflower Tomato Soup Topped with Crunchy Bacon
Keto Cauliflower tomato soup is perfect during the winter months when you'd rather be inside instead of out in the cold. Your family will love this soup and they won't even know there is cauliflower hidden away with lots of extra nutrients.

  • ½ cup half-half or whipping cream
  • 1-pint cherry tomatoes
  • 1 jar of tomato passata 660ml or homemade canned tomatoes
  • 3 cloves of fresh garlic minced
  • 1 medium yellow onion chopped
  • ⅓ cup dry basil
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1 teaspoon keto-approved sugar substitute (optional)
  • 6 cups chicken bone broth or stock (homemade or store-bought)
  • Add 2 tbsps or cubes of Knorr chicken stock base if needed for homemade stock
  • 3 cups of riced cauliflower raw
  • 1 tablespoon butter
  • 1lb bacon cooked crunchy (topping)
  • 2 spring onions chopped (topping)
  • Parmigiano Reggiano (topping)
  1. In a large soup pot add your butter, garlic, and onions and saute until golden.
  2. Add all of the other ingredients into the chicken bone broth and simmer on medium-high heat for 30 minutes
  3. With a hand blender puree the soup until smooth and rich looking
  4. Top with crunchy bacon, Parmigiano Reggiano and chopped fresh onions
  5. Serve Hot
