Potato and Leek soup is a lovely combination of onion and potato flavour mixed together to bring you one of the creamiest, smoothest winter soups.

  • 8 medium potatoes
  • 3 large leeks
  • 1½ tablespoons butter
  • ½ teaspoon olive oil
  • ½ cup milk (or cream)
  • 5 cups of chicken stock
  • Salt n pepper to taste
  1. Wash leeks thoroughly and chop into small pieces. Place in cold water and rinse through again.
  2. In a large saucepan place the butter and oil and wait until butter has melted.
  3. Add leeks and let soften in pan for ½ hour on low on the stove top with a lid. This will create a steam effect.
  4. Peel and chop potatoes into small cubes.
  5. Add to the softened leeks and cook for another ½ hour, and place lid back on the pan.
  6. Next incorporate the chicken stock and stir slightly. Leave for another hour until potatoes have cooked through,
  7. Pour mixture into a blender and blend until smooth. Add salt and pepper to taste.
  8. Pour back into the pan and add cream or milk.
