Soft Keto Sweetheart Cinnamon Cookies (Low Carb)
Low carb cookies such as these soft keto sweetheart cinnamon cookies are perfect for snacks, breakfast cookies or holidays.

  • ½ cup Almond Flour (not Almond meal)
  • ½ cup Coconut Flour
  • 1 tablespoon ground cinnamon
  • 1 teaspoon pure vanilla extract
  • ½ cup ground Erythritol or sweetener of choice
  • ¼ cup unsweetened Almond Milk
  • 2 large eggs
  • (extra cinnamon to dust the cookies on top)
  1. Add all of your ingredients in a mixing bowl and mix until combined
  2. Cover with plastic wrap and chill in the refrigerator for 30 minutes
  3. Scoop balls with melon ball scoop and place on Silpat lined baking sheet and bake for 5 minutes at 300 degrees.
  4. Take the baking pan out from the oven and using a fork press down on the top of each cookie to make a fork indent.
  5. Put the baking tray back in the oven for a further 10 minutes until golden
  6. Dust with cinnamon and let cool
  7. Freeze up to 3 months
