Cream of Asparagus soup with Asiago cheese is the perfect start to a lunch or dinner menu paired with a sandwich or as an appetizer.

  • 6 cups chicken broth
  • 25 to 30 spears of asparagus washed and chopped.
  • Leave a few asparagus tops for garnish
  • 1 teaspoon Xanthan-gum or flour and water or cornstarch and water to thicken
  • ½ cup half and half cream
  • 1 teaspoon salt
  • 1 tablespoon butter
  • 1 teaspoon pepper
  • 1 tablespoon lemon juice
  • 1 tablespoon dry parsley
  • 1 teaspoon tarragon
  • Asiago for topping
  1. In a medium to the large pot add 2 cups of broth and the chopped asparagus.
  2. Boil until tender, remove from heat, add butter then use a stick blender to blend.
  3. If you want to leave the soup chunky don't blend completely.
  4. Add your spices, lemon juice, 4 cups chicken broth, and blend
  5. Finally, add your xanthan-gum and cream then blend again.
  6. Put back on low heat for about 15 minutes to thicken and blend as needed or desired.
  7. Top with asparagus tops, sour cream, Asiago cheese or your favourite toppings
