Lemon Dill Cucumber Salad With Feta (Keto, Low-Carb)

  • 1 large seedless cucumber
  • ¼ cup red onion
  • 1 cup crumbled Greek Feta Cheese
  • ¼ cup extra virgin Olive oil
  • 1 teaspoon Pink Himalayan Salt
  • 1 fresh lemon juiced
  • 2 cloves of fresh minced garlic
  • ¼ cup fresh or dry dill
  • 1 tablespoon oregano
  1. On your cutting board slice your washed seedless cucumber into ½ inch slices or however small or large you like.
  2. Put the sliced cucumbers in a large serving bowl.
  3. If your feta doesn't come crumbled simply break it up with your fingers in a bowl and add it to the cucumbers.
  4. In a jar add your freshly squeezed lemon, oregano, dill, salt, and extra virgin olive oil and shake until combined a minute.
  5. Pour over the cucumbers and feta and mix with a spoon.
  6. Let the cucumber sit and marinate about 15 minutes on the counter at room temperature or enjoy it right away.
