Easy Egg Drop Soup In Chicken Bone Broth (Keto)

This is an easy Keto-friendly Egg Drop Soup made in a chicken bone broth.
Serves: 4
  • 8 cups of water
  • 6-8 tablespoons of Bone Broth Powder or 2 boxes of bone broth
  • 1 teaspoon of pink Himalayan salt
  • 1 teaspoon of fresh cracked pepper or peppercorns
  • ¼ cup chopped fresh dill
  • ¼ cup chopped fresh parsley
  • 2 scallions chopped (green onions)
  • 1 minced garlic clove
  • 1 tablespoon Apple Cider Vinegar
  • 1 teaspoon of xanthan gum
  • 2 large eggs beaten
  • 1 tablespoon of freshly chopped ginger
  • 2 teaspoons of sesame oil
  1. In a large pot add your cold water, salt and pepper then bring to a boil.
  2. Add your bone broth powder to the pot. If you are using homemade or prepared bone broth you won't need to do this step apart from putting it in a pot and bringing it to a boil then lowering it to medium heat.
  3. Add in your parsley, dill, garlic, scallions, apple cider vinegar and ginger along with your sesame oil.
  4. Stir until it is all incorporated and the powder has dissolved.
  5. Taste to see if you need to add more salt.
  6. Sprinkle your xanthan gum around the pot of soup and stir continuously until it is mixed in.
  7. Bring to a medium boil.
  8. Stir the soup until you get a funnel-like movement of the broth then start streaming your beaten eggs into the pot continuing to stir in the same direction.
  9. You will notice the eggs will cook fast with-in a minute and your soup will be done.
  10. Turn off the heat and serve.
