This is a simple Indian coconut curry roasted potatoes side-dish that you can add vegetables, extra spices, meats and even cheese too. Once you have the basic recipe that's all you need.

Ingredients
5 russet potatoes
1.cup sliced red onion
5 cloves garlic
3 tbsps curry powder
1 tbsp sea salt
1 tbsp black pepper
1 can coconut milk
2 tbsps butter
2 tbsps fresh ginger
1 tbsp extra virgin olive oil
Instructions
Pre-heat oven 250 degrees
Wash and peel your potatoes and cut into cubes
In a large pot filled with cold water and add your potatoes
Par-boil on med-high heat for 5-7 minutes, drain.
In a pestle and mortar add your peeled ginger, garlic, sea salt, black pepper, and curry powder and mash to make a curry paste.
Coat the bottom of a large baking pan with extra-virgin olive oil
Add the potatoes and onions to the pan and mix the butter in to coat the potatoes evenly
Take the curry paste and mix into the potatoes and with your hand coat the potatoes with the paste
Stir in 1 can of coconut milk with a mixing spoon gently not to break any potatoes
Bake in the oven at 250 for 40 minutes.
