Magical Pillow Fluffy Pancakes
These magical fluffy pancakes are the most amazing Canadian pancakes you will ever make.

  • 1 large brown free-range egg
  • 1 cup of 2% white milk
  • 1½ cups self-rising flour
  • 2½ tablespoons avocado oil
  • 1 tablespoon granulated sugar
  • ¼ teaspoon salt
  • 1 tablespoon baking powder
  • ½ teaspoon baking soda
  • (butter for griddle and to top your pancakes)
  • Canadian Maple Syrup for pancake topping
  1. Preheat your pancake griddle to 200 degrees
  2. In a large bowl add your dry ingredients leaving a well in the middle of the bowl.
  3. Add your egg, avocado oil and milk into the center and whisk then combine into the dry ingredients
  4. On your non-stick griddle add 1 tablespoon butter all over and you'll do this every time you add a new set of pancakes.
  5. Use a ¼ cup measuring cup to scoop out the thick batter onto the griddle.
  6. Using the measuring cup motion the batter so it forms a circle.
  7. Cook the pancakes until bubbles form on the top, then flip to the other side. About 2 minutes on one side and 1 minute on the other.
  8. Once finished topping your fluffy pancakes with butter, maple syrup, whipped cream, fresh fruits or jams is ideal.
