This is an easy to make creamy keto broccoli salad that you can make minutes before dinner and it's ready to serve. The salad is loaded with shredded old cheddar, Parmigiano Reggiano cheese, crispy bacon, black olives, radish, celery, green onion, red onion, garlic, toasted pecans, cherry tomatoes.

Ingredients
6 cups of broccoli florets
1½ cups full-fat mayonnaise
4 radish cut and sliced
1 cup of chopped celery
500 grams of cooked bacon crumbled
¼ cup toasted whole pecans
4-6 cherry tomatoes
6 black olives whole pitted
⅓ cup red onion sliced thin
1 teaspoon lemon juice
1 spring onion chopped
1 teaspoon apple cider vinegar
¼ teaspoon salt (add to taste)
1 teaspoon fresh cracked black pepper
1 cup shredded old cheddar
⅓ cup freshly grated Parmigiano Reggiano
Instructions
Clean 3 crowns of broccoli enough to equal 5-6 cups and remove the stems and leaves.
Add the mayonnaise, salt, pepper, lemon juice, apple cider vinegar, and mix. (If you don't have apple cider vinegar or lemon juice just double up on the one you do have.
Include the celery, radish, bacon, red onion, spring onion, black olives then mix to combine
On top add whole or chopped toasted pecans or walnuts
