Making a keto angel food cake is simple to do as long as you follow the steps involved. This keto angel food cake takes almost like any other angel food cake but without the high sugar and carb count.

  • 12 large eggs separating the egg whites at room temperature
  • 2 teaspoons pure vanilla extract
  • 2 teaspoons pure almond extract
  • 1 cup of your favourite keto sweetener - we used half powdered Allulose and half granulated Monk Fruit
  • 1½ tsp of cream of tartar
  • ¼ tsp of salt
  • ⅓ cup coconut flour
  • ⅓ cup unflavored whey protein powder or egg white protein powder
  • 1½ cups almond flour
  • ½ tsp xanthan gum
  1. Preheat your oven to 350 degrees
  2. Start by sifting your flours including the protein only.
  3. Separate 12 large eggs keeping the whites in one bowl and make sure there is zero egg yolk in the bowl.
  4. Pour the egg whites into your KitchenAid mixer and mix until frothy bubbles then add the cream of tartar.
  5. Next add your allulose and monk fruit, almond extract, and vanilla extract
  6. Beat the egg whites until soft peaks form
  7. Remove the egg whites with soft peaks off of the mixer and fold the dry ingredients in 2-3 parts. xanthan gum, salt, coconut flour, almond flour, unflavored whey protein powder, or egg white protein powder
  8. Pour the batter into a parchment-lined tube pan and use icing smoother or a knife to even the top.
  9. Bake at 350 degrees for 1hr or until golden brown
