Easter is upon us, and I wanted something different from Easter cupcakes for dessert for our pot-luck Easter dinner.

These Chick Easter Tarts are adorable and even better for a treat after a lovely Easter dinner.

Today, I’ll show you how simple my Chick Easter Tarts are to make, and I hope you enjoy making them as much as I do.

Easter Tarts Make Everyone Smile

So thinking ahead (as one of the kids has an egg allergy) I thought if I made some Easter nests or as I call them Easter tarts with little chicks.

These are great desserts for them that are not too sweet, easy to make, and something they can all eat.

There were about 12 kids in the group from 11-3, so I had to do something that was tasty and eye-popping.

I will also use my favourite cake decorating book for this recipe called “Cupcakes, Cookies & Pie, Oh My” by Karen Tack & Alan Richardson.

It is a great cookbook to have on hand to show you how to use simple everyday sweets and biscuits and turn them into masterpieces.

I have used it a few times for cupcakes for my son’s kindergarten class, and they were a hit.

When he was younger, we made shoes for the girls and frogs and monsters for the boys.

Family Easter Desserts

I’m the dessert lady in our family and always get asked to bring my Easter tarts decorated with a chick.

I also like to make extras for the neighbours who come around since we have no family in Canada.

Another favourite treat is my  Easter shortbread bunnies with lemon drizzle. I bring a batch with me as you can never have enough desserts at the table.

My perfect Easter dinner is a full day of eating, chatting, and being surrounded by friends and family.

Food For An Easter Potluck

There is no theme, just a potluck, so already on the menu is

  • Popcorn Chicken Salad
  • Glazed Ham with Pineapple
  • Twice-baked potato skins (we always get asked to bring these.
  • Homemade baked beans and pork sausage

There are also a few other salads and veggie dips; no meal is complete without homemade dinner rolls.

I don’t think we will be going hungry, and that’s not including the desserts after the meal

If you are looking for an egg-free Easter treat that is not too sweet, this is the one.

Ingredients

  • 1/2 pack of ready-to-use sweet pastry tarts
  • 4 cups store-bought vanilla pudding, prepared as per instructions on the box
  • 1/2 teaspoon coconut extract
  • 2 cups sweetened shredded coconut
  • 1 orange and 1 red licorice twist (rainbow Twizzlers)
  • 2 containers (8 ounces) of frozen whipped topping (cool whip), thawed
  • 24 mini chocolate chips
  • 1/2 cup of either white jelly beans or Cadbury mini eggs

Instructions

  1. Place the pastry cases on tray and bake. Once cooked, let cool.
  2. Mix up vanilla pudding as per box instructions.
  3. Stir the coconut extract and pudding mix and place into pastry tarts until they are about halfway up.
  4. Preheat oven to 350oF, place coconut onto parchment paper, and cook until toasted.
  5. Shake the tray every few minutes to ensure you don’t burn the coconut. The coconut should come out golden brown, transfer and let cool.
  6. Cut the orange licorice into twelve 3/4-inch triangles with scissors.
  7. Cut the red licorice crosswise into 36 thin slices with scissors.
  8. For the nests, sprinkle the edges (or top them fully if it’s just a nest) of the pies with some toasted coconuts.
  9. For the chicks, divide the whipped topping among 2 ziplock bags. Press out the excess air and close the bags.
  10. Working with one bag at a time, keeping the others refrigerated, snip a corner from the bag. For the body, pipe a large dollop of whipped topping in the center of a pie allowing it to form a peak at one end for the tail. Then pipe a smaller dollop for the head. Then pipe a wing at either side of the head.
  11. Then using the licorice, use the orange for the beak, three thin red slices for the tuff on the head, and then for the hen’s wattle (flappy bits under their necks).
  12. Use the chocolate chips for eyes and chocolate eggs on white jelly beans around the nest to look like eggs.

I topped the rest of the custard with a strawberry and glaze to make tarts.
