WE’RE GOING BANANAS BAKING CHOCOLATE CHIP BANANA BROWNIES!

 

All you’ll need to make these moist chunky monkey chocolate chip banana brownies are two beautifully ripe bananas. There always seems to be extra bananas in our house that have passed their perfectly ripe point which means we add it to our banana freezer stash.

Most of you probably do the same, right?

These chocolate chip banana brownies are a balanced blend of a cake-like fudgy brownie texture throughout the pan. To be honest these are the perfect sweet snack to make and they are inexpensive. They are comparable to banana bread bars loaded with chocolate chips but I’ve added a secret ingredient, Greek Yogurt.

Bonus, if you’re a fan of peanut butter you can add some of that in to make a chocolate chip peanut butter banana sandwich brownie! Add in a swirl of strawberry jam and you’ve got one loaded brownie.

 

Eat Me or Leave Me

 

When it comes time to bake we know if bananas are in the recipe, we’ve got them so don’t toss them out thinking they are rotten. Food waste is a huge issue in Canada so finding ways to utilize foods the best you can without waste is very important especially on your wallet

How do you know when your bananas are ripe?

  1. If you can peel it easily
  2. If there are brown spots

If you find you are struggling to open a green bananas just give them a day or so and you will see them ripen quickly by leaving them on the counter. You can also put a few inside of paper bag with an apple to help speed up the process as the apple gives off a gas needed to ripen just about anything.

Ideally a banana that is bright yellow and soft to the touch is perfect for eating. Not too sweet not too bland. When the banana turns brown or has spots this indicates that the sugar level in the banana is at its highest peak and perfect to eat or bake with. I tend to wait until bananas are dark brown before I peel and store them in a container for future baking needs.

If you have a bunch of bananas you’ve saved up and would like an easy brownie recipe these moist banana brownies will work beautifully. If you don’t have any bananas but want to make these chocolate chip banana brownies head to your local produce department and ask the clerk if they have any ripe bananas in the back for a reduced price. Most often they do which means you can score bananas for super cheap!!

 

Chocolate or No Chocolate

For those of you who aren’t too keen on chocolate chips you can enjoy these banana brownies with or without the chocolate chips.

That means if you simply want flavourful banana brownies you can enjoy them plain or add in a boatload of chocolate chips to take them to the next level.

Clearly you can see how we handled the banana brownies because our little guy and myself love chocolate!

For these banana brownies we chose to use Nestle Toll House chocolate chips but you can use whatever you have on hand.

I find if you buy a good brand of chocolate chips you get the best chocolate quality and flavour.

My tip is to stock up on a bag or two if you see them go on sale. We keep ours in a large Tupperware container in the pantry.

Mrs. CBB and I always keep a stash of brownie ingredients in the pantry whether they are for keto brownies or everyday simple brownies like these banana brownies. That’s lots of brownies!!

Chocolate Chip Banana Brownies are great because they are cake-like with areas of dense brownie texture plus you can eliminate the chocolate chips and go with banana brownies.

Ingredients
  • 1 large egg
  • 2 ripe bananas mashed
  • ½ cup brown sugar
  • ¼ cup white granulated sugar
  • 1 tablespoon vanilla extract pure
  • 2 cups sifted all-purpose flour
  • 1/1/2 teaspoons baking powder
  • ½ cup softened butter
  • ½ cup Greek Yogurt *your choice
  • pinch of salt
  • 2 cups chocolate chip morsels (1 cup for the top)
Instructions
  1. Pre-heat your oven to 350 degrees
  2. Spray a 9 inch square cake pan with cooking spray or lightly butter it
  3. Line pan with parchment paper hanging off the edges for easy removal
  4. In a large mixing bowl add your butter, egg and sugar then using a hand mixer blend until smooth.
  5. Add your bananas, yogurt, vanilla and salt and mix until combined
  6. Gently add your sifted flour and baking powder and mix until combined
  7. Fold in one cup of the chocolate chips reserving the other cup for the topping
  8. Pour batter into your prepared baking pan then top with remaining chocolate chips.
  9. Bake for 25 minutes or until a toothpick comes out clean. Let completely cool then cut into even brownies and serve.
