This soup is full of flavour with tender bites of beef, whole mushrooms, cabbage and fresh green broccoli.

When eating this Slow Cooker Vegetable Beef Soup you’ll want to dip homemade fresh keto bread or keto buns slathered in butter.

Although we eat mainly a keto, low-carb diet I try to make some of our recipes for people who are not on keto.

To be honest, there’s really no difference apart from adding the “Keto” or “Low-Carb” name to the recipe for most of them.

As you will see from the recipe ingredients below there’s nothing different than any other vegetable beef soup.

High Carb Vegetables vs. Low Carb Vegetables

What you will notice is that there are not any high-carb vegetables in this soup BUT you can add any veg that you like.

However, I did add a list of keto-friendly vegetables at the end that you can include if you fancy something different or even more veg.

Perhaps you’re not eating a keto-lifestyle, well I’ve got you covered too.

You’ll find a list of other vegetables such as corn, carrots and potatoes that you can easily add to the slow cooker for a heartier soup.

Easy Vegetable Beef Soup In The Slow Cooker

What I love about this soup is that it’s so easy to make and you don’t have to hang around watching a pot on the stove.

However, if you don’t have a slow cooker or instant-pot you can easily make this on the stove-top.

This soup is full of flavour with tender bites of beef, whole mushrooms, cabbage and fresh green broccoli for added texture.

Without a doubt, this vegetable beef soup will be comfort food for those cold winter days and fill your tummy with joy.

Homemade Beef Bone Broth vs. Store-Bought Beef Bone Broth

Don’t stress over whether you have homemade or store-bought beef bone broth or not.

We typically make bone broth at home using bones from the butcher or we buy a whole chicken so we can freeze it for later use.

I like to store our bone broth once cooled in large zipper bags in the freezer as I find they take up less room.

How To Make Slow Cooker Bone Broth

To make my slow cooker beef bone broth

  • 3-4 pounds of beef bones, ribs, oxtail or any other bones available
  • 2 unpeeled onions quartered
  • 3 celery ribs
  • 2 unpeeled carrots chopped
  • water to cover
  • 1 tablespoon salt
  • 1 tablespoon whole peppercorns
  • 2 bay leaves
  • 3 cloves whole garlic
  • 2 tablespoons apple cider vinegar.

Roast The Vegetables And Meat

I roast the veggies and meat in the oven until browned then add everything including any juices to the slow cooker.

Follow that by adding cold water just to cover the top of the meat and vegetables.

I will cook the beef stock in the slow cooker for 24 hours skimming off any fat that floats to the top.

If making homemade bone broth is not your thing you can buy it in cartons or cans from the grocery store for $2-$3.

How To Make The Soup Base

Add to a 6-quart slow cooker

Browning The Meat

  • 2 pounds of flank steak, sirloin steak or beef stewing meat
  • 1 medium onion minced
  • 3 cloves garlic minced
  • 1 teaspoon salt
  • 1 head fresh or frozen broccoli cleaned and chopped
  • 1 teaspoon pepper
  • 2 tablespoons extra virgin olive oil

Optional Vegetables For Vegetable Beef Soup

  • 2 potatoes cubed (not keto)
  • 1 cup peas (not keto)
  • 2 sweet potatoes cubed (not keto)
  • 1 cup of Chickpeas, Black-eyed Peas or Pinto Beans
  • 2 carrots sliced (not keto)

Keto Approved Vegetables

  • 1 cup of corn (not keto unless it’s baby whole corn)
  • 1 cup green beans
  • Red, Green, Yellow or Orange Peppers
  • Spinach, Kale
  • Cauliflower
  • Asparagus
  • Brussel Sprouts
  • Swiss Chard
  • Eggplant
  • Fennel
  • Bok Choy
  • Zucchini
  • Rapini or Broccoli Rabe

If you love a hot bowl of vegetable beef soup in the winter this is an easy throw it together slow cooker soup that goes perfect with a salad or sandwich and packed full of bold flavours.
Ingredients
  • Soup Base – Add to a 6 quart or larger slow cooker
  • 1 medium can stewed tomatoes (use the juices too)
  • 4 cups beef bone stock
  • 2 tablespoons tomato paste
  • 1 teaspoon basil
  • 1 tablespoon dried parsley or a bunch of fresh chopped up
  • 2 bay leaf (take out before serving)
  • 1 tablespoon Worcestershire sauce
  • 2 tablespoons hot sauce (I used Franks Red Hot) -Optional
  • 1/4 cup low-sodium soy sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon fresh ginger
  • 2 ribs celery chopped
  • 2 cups chopped green cabbage
  • 2 cans whole mushrooms or 2 227g whole fresh mushrooms cleaned
  • Saute in Pan
  • 2 pounds of sliced flank steak, sirloin steak or beef stewing meat
  • 3 cloves garlic minced
  • 1 medium onion minced
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 2 tablespoons extra virgin olive oil
  • 1 head fresh or frozen broccoli cleaned and chopped
Instructions
  1. In your slow cooker add all of the soup base ingredients.
  2. Note: I make my own beef bone broth with bones I get from the butcher at the local grocery store. You can also buy beef stock in cans or cartons from the grocery store that work equally as well.
  3. In a large saute pan add your extra virgin olive oil, garlic, salt, pepper, minced onion, broccoli and meat. I slice the meat before browning to make it easier but you can brown it whole and slice it after as well.
  4. Once browned add the beef and broccoli mixture to your slow cooker and mix it together.
  5. Turn the slow cooker on high for 4 hours or low for 6 hours.
  6. Remove bay leaf before serving
 

Serving Suggestions For Your Vegetable Beef Soup

You can garnish your easy vegetable beef soup with chopped green scallions or sesame seeds before serving.

Don’t forget to add fresh bread and butter to the table for dipping.

Another great option is to add noodles to the soup if you want to bulk it out.

Our favourite keto noodles by a landslide are by NuPasta which we buy online or you can find at select grocery stores in the health food aisle.

NuPasta is a low calorie, high fibre, gluten-free alternative to traditional pasta.

On a side-note, if you don’t have a slow cooker or instant-pot you can make this vegetable beef soup in a pot on the stove-top.

Follow the instructions the same in the recipe and let the soup cook on medium-high heat for about 1 hour.
