💡 Did You Know?
Many recipes refer to Cannellini Beans, while Canadian grocery stores often label them as White Kidney Beans.
The good news?
They’re the same bean.
“Cannellini” is simply the Italian name for white kidney beans, so whichever label you find at the grocery store, you’re buying the same creamy bean that’s perfect for salads, soups, and pasta dishes.

One of my favourite parts of sharing recipes is showing readers simple ways to reduce grocery costs without sacrificing quality.
Here are a few of the ways I save money when making this salad.
✔ Buy dried white kidney beans instead of canned whenever possible.
✔ I cook my dried beans in the slow cooker because it’s hands-off and allows me to prepare a large batch at once. Some home cooks prefer simmering them on the stovetop or using an Instant Pot. Choose the method that works best for your schedule.
- Freeze the cooked beans in 1½ cup portions, about the same amount as one drained 540 mL can.
- Purchase feta cheese when it’s on sale and freeze any leftovers for future recipes.
- Grow basil and mint in containers during the summer instead of buying fresh herbs every week.
- Freeze fresh lemon juice in ice cube trays so it’s always ready when you need it.
- Shop your pantry before heading to the grocery store.
- Check Flashfood or your grocery store’s markdown section for vegetables you’ll use the same day.
- Small shopping habits like these can add up to significant savings over the course of a year.

🍎 Why Add an Apple?
You might not expect to find a Honeycrisp apple in a Mediterranean-inspired salad. Still, it adds a wonderful sweetness and crisp texture that balances the salty feta and tangy lemon dressing.
Don’t be afraid to make a recipe your own. Some of our family’s favourite meals started with a simple experiment in the kitchen.

❤️ From Mr. CBB’s Kitchen
One thing I’ve learned over the years is that healthy eating doesn’t have to cost a fortune.
People often tell me they don’t have time to cook dried beans, but that’s why I use my slow cooker. I’ll prepare a large batch, portion them into freezer bags, and always have homemade beans ready for recipes like this.
It’s one of those small habits that saves money month after month while making healthy meals just as convenient as opening a can.
This salad has quickly become one of my favourites because it’s colourful, filling, and packed with ingredients that don’t break the grocery budget.
Sometimes the best recipes aren’t the most complicated—they’re made with fresh ingredients, a little planning, and a lot of flavour.
Happy cooking!
