Bacon and mayonnaise go together, and I don’t care what anyone says. It tastes delicious as a dip or bacon sauce for your sandwich.
In the keto world, this bacon mayonnaise has taken on the name “Baconnaise, ” which suits it well.

Where your typical homemade mayonnaise is made with an oil such as olive oil, or avocado oil, this bacon mayonnaise is made with, you guessed it, bacon grease or bacon fat.
When Mrs. CBB started her Keto lifestyle, she never really ate mayo until she learned it was part of the keto diet.
Upon recently reading labels on mayonnaise products, she realized that many of them have added sugar to the ingredient list.
Let’s look at the ingredients that make Hellman’s Olive Oil mayonnaise popular among Canadians.

When working towards better health and weight loss like she is good, fats are your friend, and you will want to avoid sugar.
Why? Carbs are turned into sugar or glucose, first used by the body for energy.
This is why it’s essential to keep your body in a state of ketosis so it uses fat stores and is not constantly being fed from sugar.
Anyway, I’m not a keto doctor, just a bystander of my wife’s fantastic results over the years on keto.
Another thing to watch out for is hidden sugars in the bacon you buy.
Not all bacon is sugar-free, so we purchased smoked bacon from the butcher at our local grocery store.

Not all sugars will say sugar either, so be cautious about hidden ingredients that sound healthy but are not the best.

- Fruit Juice
- Agave Syrup
- Vegetable Glycerin
These high-carb sugars taste good but are not ideal for someone on a keto diet.
Some people are on the fence about Sucralose found in Splenda; however, Mrs. CBB has not experienced any issues.
It’s essential to make decisions based on how your body works with certain keto products and whether it kicks you out of ketosis.
How To Make Keto Garlic Parmesan Bacon Mayonnaise
You’ll find that bacon fat mayo texture will be the same as any other mayonnaise you purchase.
When we make our garlic parmesan bacon mayonnaise, we make enough for a few days so it keeps fresh.
We use lemon and white vinegar in this baconnaise recipe rather than apple cider vinegar, although you can use either.
If you don’t have fresh lemon juice, you can substitute it for Real Lemon Juice or whatever your grocery store or Amazon has.
Enjoying and Storing Your Bacon Mayonnaise
When it is freshly made, the best time to enjoy the bacon mayonnaise is right out of the blender.
However, add what you don’t use to a small mouth mason jar and refrigerate for 3-5 days.
When you refrigerate the bacon mayonnaise, it will harden to a butter consistency but is easily remedied.
I put what I need in the microwave oven for 10 seconds, and it’s beautiful as a warm Caesar salad dressing.
I’ve also used this keto bacon mayonnaise as part of the filling for deviled eggs or our tuna salad.

- 1 cup of cooled and strained bacon grease (bacon fat)
- 1/2 fresh lemon squeezed
- 1 tsp salt or pink Himalayan salt (add more or less to taste)
- 1 tablespoon white vinegar
- 2 large egg yolks
- 1 teaspoon Dijon mustard or grainy Dijon mustard
- 1 tsp fresh ground pepper (optional)
- 2 tablespoons fresh grated Parmigiano Reggiano
- 2 garlic cloves
- 3 tablespoons fresh parsley (optional)
Add all ingredients except the bacon grease to a blender or use a hand immersion blender and a deep bowl.
Mix until combined, and then stream the bacon fat and mix at the same time until fluffy and creamy.
