Bacon and Mayo go together and I don’t care what anyone says, it tastes delicious as a dip or bacon sauce for your sandwich.

Where your typical homemade mayonnaise is made with an oil such as olive oil, avocado oil this bacon mayonnaise is made with, you guessed it, bacon grease or bacon fat.

When Mrs. CBB started here Keto lifestyle she would never really eat mayo until she found out it was part of the keto diet.

Upon recently reading labels on mayonnaise products she realized that many of them have added sugar to the ingredient list.

These are all high-carb sugars that taste good but not ideal for someone on a keto diet.

Some people are on the fence about Sucralose which is found in Splenda however for Mrs. CBB she has not experienced any issues with it.

It’s important to make your own decisions based on how your body works with certain keto products and whether it kicks you out of ketosis.

How To Make Keto Garlic Parmesan Bacon Mayonnaise

You’ll find that bacon fat mayo texture will be the same as any other mayonnaise that you purchase.

When we make our garlic parmesan bacon mayonnaise we make enough for a few days so it keeps fresh.

We use lemon and white vinegar in this baconnaise recipe rather than apple cider vinegar although you can use either.

If you don’t have fresh lemon juice you can substitute for Real Lemon Juice or whatever your grocery store or Amazon has for you.

Enjoying and Storing Your Bacon Mayonnaise

Keto Garlic Baconnaise

The best time to enjoy the bacon mayonnaise is right out of the blender when it is freshly made.

However, what you don’t use add it to a small mouth mason jar and refrigerate for 3-5 days.

When you refrigerate the bacon mayonnaise it will harden to a butter consistency but easily remedied.

I put what I need in the microwave oven for 10 seconds and it’s wonderful as a warm caesar salad dressing.

I’ve also used this keto bacon mayonnaise as part of the filling for deviled eggs or in our tuna salad.

Ingredients:

  • 1 cup of cooled and strained bacon grease (bacon fat)
  • 1/2 fresh lemon squeezed
  • 1 tsp salt or pink Himalayan salt (add more or less to taste)
  • 1 tablespoon white vinegar
  • 2 large egg yolks
  • 1 teaspoon Dijon mustard or grainy Dijon mustard
  • 1 tsp fresh ground pepper (optional)
  • 2 tablespoons fresh grated Parmigiano Reggiano
  • 2 garlic cloves
  • 3 tablespoons fresh parsley (optional)

Add all of the ingredients except the bacon grease to a blender or you can use a hand immersion blender and a deep bowl.

Mix until combined and then stream the bacon fat and mix at the same time until fluffy and creamy.

Enjoy.

This is a simple 7 ingredient creamy keto garlic parmesan bacon mayonnaise also known as "baconnaise" but with added garlic and parmesan.
Ingredients
  • 1 cup of cooled and strained bacon grease (bacon fat)
  • ½ fresh lemon squeezed
  • 1 tsp salt or pink Himalayan salt (add more or less to taste)
  • 1 tablespoon white vinegar
  • 2 large egg yolks
  • 1 tsp fresh ground pepper (optional)
  • 2 tablespoons fresh grated Parmigiano Reggiano
  • 2 garlic cloves
  • 3 tablespoons fresh parsley (optional)
Instructions
  1. Add all of the ingredients apart from the bacon grease to a blender
  2. Mix until combined then start streaming the bacon fat from the top of your blender
  3. Combine all of the ingredients on high until fluffy and a thick mayo texture.
