Fun Fact: Did you know that cucumbers are best left on the counter and not in the refrigerator until it is cut open?
We keep English cucumbers on the counter in plastic wrap for a few days without issues.
If cucumbers come with a plastic wrap, keep that on until you’re ready to use them, as it retains moisture.
Alternatively, if you grow cucumbers, you can store them on the counter for up to a week without wrapping.
You can also refrigerate cucumbers for a few days, and when you are ready to eat one, run it under cold water.
I often find that they get soft after a few days, so we always leave them out.
Ways To Eat Cucumbers

You can eat cucumbers with or without the peel, which has nutritional value, although we partially peel them for our son.
He’s Autistic and struggles with food textures, so his diet is limited.
If he eats cucumbers, we’ll serve them how he likes them.
We’ve also purchased small cucumbers pre-bagged from Costco, which are perfect for his lunch, pickling or salads.

- 4 mini cucumbers or 1 English cucumber (use any slicing cucumber you’d like)
- 1/2 cup thinly sliced red onion
- 2 stalks of celery, washed and sliced thin
- 4 red radishes that are washed and sliced thin
- 2 fresh basil leaves rolled and sliced thin
- 4 fresh mint leaves rolled and sliced thin
- 1/4 cup of roasted peanuts

As you can imagine, the dressing is a significant player in this salad with loads of flavour.
I fell in love with this recipe, although I had to play around with the flavours until they were just right.
Set the finished dressing aside until you are ready to pour it over your vegetables.
If you plan to take the Thai Cucumber Salad to a party, add the dressing five minutes before serving and mix thoroughly.
The significant part about using the mason jar is that it’s easy to pack for a picnic or party.
Sprinkle the chopped roasted peanuts over the mixed salad last, so they don’t get soggy.

How to make the cucumber salad
- Wash and slice the mini cucumbers then dry them off by setting them on a kitchen towel for a few minutes. It's important that the cucumbers are dry,
- Slice the red onions thin
- Wash and dry the celery and slice
- Chop the tip of the radish then wash and slice thin
- Take both the fresh mint and fresh basil, roll and slice thin
- Add all of the ingredients into a large serving bowl
- Top with the dressing and mix 5 mins before serving
- Add fennel greens and chopped peanuts over top the finished salad

Using a mason jar for the dressing helps for easy transportation if you are going to a party.
