These Easy Vanilla Mummy Cupcakes are a fun Halloween treat made with moist vanilla cupcakes, cream cheese frosting and candy eyes.

On Friday, we received an email from our son’s teacher about dressing the kids up for Halloween.

The last sentence of the email stated that parents could send a treat if they’d like for the class, with no pressure.

Ugh, that pressured me to pull something together fast over the weekend, but what?

The class needed a nut-free option, so I couldn’t make my spooky Witch Finger Cookies. If you’re baking for a school or allergy-sensitive setting, check every ingredient label and follow the school’s allergy policy before sending treats.

I had three goals: 1) I didn’t want to leave the house for ingredients, 2) the treat had to be easy, and 3) a treat I could make in advance.

Bringing Mummy Vanilla Cupcakes To Life

I’m not a cake decorator, but I do enjoy baking and have for many years.

I pulled down the baking junk bucket to see any decorations that could inspire me.

Would you believe I had a package of candy googly eyes that I hadn’t opened?

Rushing out at the last minute to find something nut-free was not on my radar.

That’s when Mrs. CBB said, make vanilla mummy cupcakes with frosting and googly eyes.

Making a moist vanilla cupcake is a breeze, as is a vanilla cream cheese frosting.

That extra pack of candy eyes tied the Halloween treat together perfectly.

Don’t judge my beginner dad’s piping skills, as I’m not skilled in this area.

However, you might be an advanced decorator and dig the mummy vanilla cupcakes idea for a Halloween dessert.

Either way, they turned out amazing, and everyone will enjoy them for Halloween.

I realize that not everyone will have a spare pack of candy eyes in their cupboard; however, they are easy to find.

For the vanilla cupcake, I had to improvise because I usually add 1/4 cup of Greek yogurt, but we didn’t have any.

If you don’t have Greek yogurt, full-fat sour cream works well. I used a strawberry yogurt drink in this batch, and it still produced a light, moist cupcake without a noticeable strawberry flavour.

Two things you’re probably thinking;

  • Did it work with the strawberry yogurt drink?
  • Could you taste the strawberry?

The quick answers are YES, it worked perfectly, and no, we could not taste the strawberry.

Using yogurt or sour cream allows for an airy, light-tasting cupcake that is moist.

You’ll also need flour, sugar, baking powder, pure vanilla extract, one large egg, and melted butter.

Instructions

  1. Preheat oven to 350 Degrees.
  2. Line a muffin tray with 12 large liners.
  3. In a stand mixer, add the melted butter, granulated sugar, and egg, then mix until fluffy, one to two minutes.
  4. Add the yogurt, milk, and vanilla and mix for one minute.
  5. Slowly add the flour and baking powder until combined. (Do not overmix).
  6. Using a large ice cream scoop or spoon, evenly distribute the batter into twelve large muffin liners.
  7. Bake for 15-20 minutes or until the tops are golden and a toothpick comes out clean.
  8. Let cool completely before frosting.
  9. Put the icing into a piping bag and make a swirl of icing around the outer edge of the cupcake and a blob in the middle.
  10. Add two candy googly eyes over the top of the blob of icing.

Tips To Make The Best Vanilla Cupcakes

  • Do not over-mix the batter- Only mix until combined.
  • Use a large muffin scoop to ensure each cupcake liner gets an even amount of batter.
  • Do not over-bake the cupcakes, or the tops will get crusty.
  • Baking is a science, so follow the measurements and watch your oven, as they are not created equally.
  • Yes, you can substitute yogurt for sour cream.

Basic Vanilla Cream Cheese Frosting

I made my quick cream cheese frosting, but you can use icing or whipped.

  1. While the cupcakes are baking, make the vanilla cream cheese frosting.
  2. Put the softened cream cheese and butter in a stand mixer or with a hand mixer and mix until combined, about 30 seconds.
  3. Add the pure vanilla extract and the confectioner’s sugar and mix for another 1 1/2 minutes.

It’s my go-to vanilla frosting for cakes, bars, and cupcakes that can easily be tinted.

However, if you’re pressed for time or don’t have the ingredients, go for Duncan Hines vanilla frosting.

Best Vanilla Cupcakes

I scooped the frosting into a dollar-store icing piping bag (buy a good one if you’re a decorator).

Since I’m serving the Vanilla Mummy Cupcakes to kids, I wanted to reduce the amount of frosting.

They likely won’t eat all of the frosting and waste it anyway. Besides, you don’t want it to be too sickly sweet.

I add a thin layer of frosting to the cooled cupcake as a base before I pipe swirls around the cupcake.

In the center of the cupcake, I added a blob of frosting before adding two googly eyes.

Simple, delicious, follows a Halloween theme, and our son thought they looked scary!

You can use this vanilla cupcake recipe for any occasion, including a wedding.

  • 1/4 cup Greek yogurt, sour cream, or yogurt drink

Vanilla Cream Cheese Frosting

  • 4 oz (1/2 brick) cream cheese, softened
  • 3 tablespoons butter, softened
  • 2 teaspoons pure vanilla extract
  • 1 1/2 cups confectioners sugar (icing sugar)
  • 24 candy eyes

Instructions

  1. Preheat the oven to 350°F and line a muffin pan with 12 cupcake liners.
  2. In a stand mixer, beat the melted butter, granulated sugar and egg until light and fluffy, about 1 to 2 minutes.
  3. Add the yogurt or sour cream, evaporated milk and vanilla extract and mix for about 1 minute.
  4. Gradually add the all-purpose flour and baking powder. Mix only until combined; do not overmix.
  5. Divide the batter evenly among 12 cupcake liners.
  6. Bake for 15 to 20 minutes, until the tops are lightly golden and a toothpick inserted in the centre comes out clean.
  7. Cool completely before frosting.
  8. For the frosting, beat the softened cream cheese and butter until combined, about 30 seconds.
  9. Add the vanilla extract and icing sugar and beat for about 1 1/2 minutes, until smooth.
  10. Spread a thin layer of frosting over each cooled cupcake. Pipe frosting in mummy-like swirls, leaving space for the eyes.
  11. Add two candy eyes to each cupcake and serve.
