It’s the fall, and most Canadians enjoy apple picking at local farms and undoubtedly come home with an array of apple varieties.

Last year, I made the most delicious and moist apple fritter dutchie cake recipe, but I wanted to try something different.

Our son proposed putting apples on pancakes, so Mrs. CBB and I took it further with Apple Fritter Pancakes.

There’s nothing healthy about this fall treat, but it’s not something you’ll eat every day.

I decided to share a variety of pancake recipes that I’ve blogged about, along with apple sauce made in a crockpot.

Keep half the apples chunky before you puree the crockpot applesauce and use that as a healthier topping alternative.

Instead of adding a vanilla glaze like a classic apple fritter donut from Tim Hortons or your favorite bakery, opt for thick 0-2% Greek Yogurt instead.

I used my recipe for Pillow Fluffy Pancakes for this fall breakfast dessert; however, you can use any recipe you’d like.

If you’re not a pancake fan, opt for waffles, buttered toast, or crumpets.

Indulge in Apple Fritter Pancakes this fall with fresh apples and delightful flavors. A unique treat for pancake lovers, topped with either vanilla glaze, Greek yogurt, and Canadian maple syrup.

Vanilla Glaze Ingredients

Fluffy Pancakes

  1. Preheat your pancake grill to 200 degrees.
  2. Add dry ingredients to a large bowl, leaving a well in the middle.
  3. Add your egg, avocado oil, and milk into the center and whisk, then combine the dry ingredients.
  4. Add one tablespoon of butter to your non-stick skillet, and you’ll do this every time you add a new set of pancakes.
  5. Use a 1/4 cup measuring cup to scoop the thick batter onto the griddle.
  6. Using the measuring cup, motion the batter so it forms a circle.
  7. Cook the pancakes until bubbles form on the top, then flip to the other side. It takes about 2 minutes on one side and 1 minute on the other.
  8. Once finished, top your fluffy pancakes with the prepared apple fritter filling, vanilla glaze, or Greek yogurt. Optional Topping- Canadian Maple Syrup

  • Over medium heat, place the butter and lemon juice in a cast-iron or heavy frying pan. Add the chopped apples and brown sugar to the frying pan.
  • Cook the chopped apples over medium-high heat for 10-15 minutes until they are partially soft.
  • Add the cornstarch to cold water and pour it over the cooked apple mixture, stirring occasionally until thickened.
  • Remove the apple mixture from the heat and add the cinnamon and nutmeg. Once cooled completely, the apple fritter pie mixture will have thickened.

How To Make Vanilla Glaze

  • Add powdered sugar, vanilla, and milk to a medium bowl. Stir to combine.
  • If the glaze is too thick, add a bit of milk to thin it out.
  • Use the vanilla glaze or Greek yogurt to top the Apple Fritter Pancakes.

  • 1 large brown or white free-range egg
  • 1 cup of 2% white milk
  • 1 1/2 cups self-rising flour
  • 2 1/2 tablespoons avocado oil
  • 1 tablespoon granulated sugar
  • 1/4 teaspoon salt
  • 1 tablespoon baking powder
  • 1/2 teaspoon baking soda
  • (butter for griddle and to top your pancakes)

  • 4 large apples
  • 2 tablespoons lemon juice
  • 3 tablespoons butter
  • ¾ cup firmly packed brown sugar
  • 1 cup cold water
  • 1 ½ tablespoons cornstarch
  • 1 tablespoon ground cinnamon
  • 1 teaspoon ground nutmeg
  • 1 teaspoon ground allspice
  • 1/2 teaspoon ground ginger

  • 2 cups of powdered sugar
  • 1 teaspoon pure vanilla extract
  • 3-4 tablespoons whole milk

    Notes

    • Use healthier pancake options if you choose- See post for other recipe I've created for pancakes.
    • Maple Syrup or sugar-free syrup is optional but delicious.
    • Add a nob of butter for a creamier taste.
    • Substitute sugar in the apple recipe for sugar-free options.
    • Add more or less spice seasoning as desired.
    • Top with either vanilla glaze or Greek Yogurt, both options are delicious.
    • The amount of pancakes you make depends on how big or little you make them.
