I didn’t want to make lemon cheesecake bars, which are also great for snacks, so I opted for lemon cheesecake stars.

If you want a simple cheesecake recipe that will deliver quality and flavor but don’t want to make a full cheesecake recipe, these little lemon cheesecake stars are a 10+.

My family has been busy this last month, with registration for football and soccer in full swing.

It won’t be long before our weekends are booked, so I’ll pack lots of lunches and snacks to take along the road.

I wanted to create something with lemon since I love lemon desserts and have shared many on the blog over the past year.

My kids are about to finish school for summer break, so they have asked me if they could take in some of their favorite, Lemon Cheesecake Stars.

I always like to bake something sweet, which is a great way to end the school year.

They have games, hotdogs, and treats on the last day of school, so I’m sure the Lemon Stars will be a hit.

Plus, this is an easy dessert to make when you want something to stand out but don’t have much time to spare.

How To Make Lemon Cheesecake Stars

Lemon Cheesecake Stars are surrounded by a light and fluffy, sweet lemon pastry.

The Lemon Cheesecake Stars taste like a bun with a luscious creamy cheesecake inside.

Lemon Cheesecake Stars start with a simple dough mix that can be used for other treats such as Sticky Toffee Buns plus an Orange and Almond Sunburst Pleat.

A pleat is simply a fold.

Lemon Cheesecake Stars Ingredients

Basic sweet Dough

  • 1/2 cup milk
  • 1/4 cup sugar
  • 4 tablespoons butter
  • 2 tablespoons water
  • 2 3/4 to 3 cups flour
  • 1/2 teaspoon salt
  • 1pkg active dry yeast = 2 1/4 teaspoons
  • 1 egg

Lemon filling

  • 1 package cream crease, softened
  • 1 egg separated
  • 3 tablespoons sugar
  • 2 teaspoons lemon juice
  • 1/2 teaspoon grated lemon rind

Basic Sweet Dough Recipe

  1. To make the dough grease a large bowl and set it aside.
  2. In a saucepan, mix milk, butter, and water. Heat until the butter has all but melted.
  3. Mix 1 cup flour, sugar, salt, and yeast in another bowl. Then add the milk.
  4. Beat an electric mixer on medium speed for a couple of minutes, occasionally scraping the bowl.
  5. Mix the rest of the flour using your hands until the dough becomes firm.
  6. Knead for a further 3-5 minutes until smooth on a floured surface
  7. Place in the greased bowl, turning it over once to cover the dough completely with a thin layer of oil.
  8. Cover and let rise for 1 hour or until it doubles in size.
  9. Grease two baking sheets.
  10. Roll the dough into a 12×9 rectangle on a lightly floured surface and cut it into twelve 3-inch squares.
  11. Place squares onto grease baking trays, then cut squares diagonally to about 1/2 inch from the center.

Lemon Filling

  1. In a bowl, beat cream cheese, egg yolk, sugar, and lemon juice and peel with an electric mixer on high until light and fluffy.

Filling The Dough

  1. Place 1 teaspoon of the mixture into the center of each square.
  2. Taking every second corner into the middle, pinch to secure it so it looks like a pinwheel.
  3. Cover and let rise for around 30 minutes until it doubles in size.
  4. Preheat oven 400oF/205oC
  5. Beat egg whites, then brush the stars.
  6. Bake for 10 mins or until golden brown.
  7. Place on a wire rack to cool.
