These days you can pick up cauliflower for $3.99 sometimes less when it goes on sale at the market or grocery store.

This is not a cauliflower mashed potato recipe because there are no potatoes involved whatsoever.

However, this is a Mashed Cauliflower Recipe and the best way to make a creamy and delicious low-carb option instead of mashed potatoes.

There are a million different names for this dish so I’ll run down a few to get the confusion off the table.

At the end of the day, these are all the same things so don’t get them confused for anything more than what it is, cauliflower mash.

  • Cauliflower puree (this is the same but more of a soupy consistency if you like your mash that way.)
  • Whipped Cauliflower mash is whipped with a hand blender but still turns to a puree in my opinion
  • Cauliflower mashed potatoes are what we want to believe this recipe actually is but there are no potatoes involved.

There are only a handful of ingredients that make up this keto cauliflower mash but it’s the process which is the key to perfection.

The best cauliflower mash that I’ve ever made must contain flavours which is why I opted for garlic and onions.

As you know there’s not much taste to cauliflower and it is extremely watery which is why you don’t want to boil it to mush.

One simple cauliflower mash recipe turns into many keto recipes so if you love cauliflower add this to your meal plan.

The idea around making the best keto cauliflower mash recipe is trial and error for many people only because of the water content.

I’ve tried squeezing the water out with a cheesecloth only to make a flipping mess which I don’t want to repeat.

My trick is to par-boil the cauliflower and then dry it slightly in a warm oven for 15 minutes to rid of the obvious moisture.

This may benefit you as well when making a cauliflower cottage pie as I’ve learned over the past couple of years.

How To Make Keto Cauliflower Mash

What we’re looking for is a chunky but smooth cauliflower mash texture loaded with butter, garlic, and onion flavours.

When you stick your fork into the cauliflower mash you want a forkful and not watch it seep through the cracks in the fork like soup.

While the cauliflower is still warm add the ingredients to a bowl and get out a hand blender and blitz it or use a food processor.

Be careful not to over-process the cauliflower mash. Just blitz, blitz, blitz.

That’s it.

You don’t have to soup-i-fy (I made that word up) the cauliflower mash just keep it a bit chunky but mashed so it tastes like you’re eating mashed potatoes.

We topped our cauliflower mash with a bit more butter and chopped chives both of which are optional.

You can also add some freshly grated Parmigiano Reggiano cheese for even more delicious tastes in your mouth.

When we make this recipe we like to pair it with Garlic, Ginger, Sesame, Orange Peel, Crispy Chicken Breast Chunks.

Easy Keto Cauliflower Mash is a simple keto side-dish that you can freeze or transform lefftovers into a many other keto recipes.
 
Ingredients
  • 1 head of cauliflower cut into florets
  • 2 tablespoons butter
  • 2 tablespoons whipping cream or sour cream
  • 2 spring onions
  • chives (optional)
  • 2 cloves minced garlic
  • salt and pepper to taste
  • Crispy Bacon (optional)

Instructions

  • Cut the cauliflower into florets and wash them thoroughly under cold water.
  • Place them into a large pot covered with cold water.
  • Add salt and cover with a lid over medium heat and boil for 10-15 minutes until fork tender
  • Pre-heat oven to 200 degrees
  • Remove from the pot and drain and lay on a baking sheet
  • Put the cauliflower into the oven for 10 minutes to release moisture and dry up.
  • Remove and add the cauliflower to a food processor
  • Add salt, pepper, minced garlic, chopped spring onion, whipping cream or sour cream
  • Blitz a few times until combined
  • Remove and garnish with a nob of butter and chopped fresh chives, parsley, cheddar, sour cream, parmesan all optional.
