Today, I’m going to show you how to make homemade sugar-free keto peanut butter ice cream pancake sandwiches rolled in chocolate chips.
Keto Peanut Butter Ice Cream Pancake Sandwiches
It was keto pancake day on a hot summer morning, and all I could think about was ice cream.
Sounds good, but it was 8 am, and here I wanted to eat peanut butter ice cream.
Then I had an idea to stuff two keto pancakes with a scoop of homemade sugar-free ice cream.
They looked great, but I rolled the ice cream sandwiches in sugar-free chocolate chips, making them even better.
After finishing each ice cream sandwich, I sat them on a small parchment paper-lined pan in the freezer.
Ice Cream Machine or Stand Mixer Attachment
One of the best kitchen tool investments we’ve ever made was to purchase a Kitchen-Aid stand mixer.
Surprisingly, we bought a five-quart Classic Kitchen Aid Mixer for $50, a steal.
Unfortunately, the low price tag came after online rebates when Zellers was out of business.
Although we already had a white Kitchen Aid Stand Mixer, we couldn’t pass the Zellers deal up.
We sold the white mixer for $200 to a young lady who wanted to start a home business.
There was a sale on attachment parts for the mixer, and we purchased the pasta maker and meat grinder.
While shopping at the Thrift Store, we found a Stainless Kitchen Aid mixing bowl new for $5.
The following month the ice cream machine and paddle for the Kitchen Aid machine went on sale.
Similarly, after the sale and online Rakuten rebates, it cost us less than twenty dollars, a fantastic deal.
No-Churn Keto Ice Cream
Over the years, we’ve made no-churn keto ice cream in a 9×5 loaf pan, which works perfectly fine.
You have to stir the ice cream mixture every hour to get a creamy consistency.
I’ve left ice cream in the freezer and not stirred it, and it came out rock solid and horrible tasting.
Although you are not churning the ice cream in a mixer, a little elbow grease for the freezer method is needed.
Consider an ice cream machine if you’re not interested in purchasing a Kitchen Aid Ice Cream attachment.
You can find many ice cream machines on Amazon Canada for a reasonable price.
Alternatively, check Walmart, Home Sense, Marshalls, and secondhand on Kijiji or Facebook Marketplace.

How To Make Keto Pancakes
Keto pancakes are simple to make, and you can find the recipe on the Canadian Budget Binder.
I’ve even learned how to make homemade sugar-free maple syrup, but you won’t need it for this recipe.
Below are the ingredients you’ll need then; follow the instructions listed in the blog post.
However, you don’t need to use cinnamon in the recipe since it doesn’t go well with peanut butter.
Ideally, you’ll want eight medium pancakes of any size you’d like, but they should be a standard size.
Doing so will allow you to make four sugar-free Keto peanut butter sandwiches rolled in chocolate chips.
We favour Krisda sugar-free chocolate chips made with stevia over any other brand in our house.

I always store my ice cream bowl in the freezer, so it’s ready whenever I am, and I don’t have to wait.
Keto Pancake Ingredients
- 2 large eggs
- 1 teaspoon baking powder
- 1 teaspoon cinnamon (not needed for the ice cream sandwich unless you like cinnamon)
- 1 tablespoon melted butter
- 1 tablespoon flax-seed meal
- 1 tablespoon almond flour
- 2 tablespoons 35% whipping cream
- 2 oz softened cream cheese
- 1 teaspoon pure vanilla extract
- knobs of butter for frying pancakes or pancake griddle (we use this)
Making Sugar-Free Keto Peanut Butter Ice Cream
Although I created this recipe for making sugar-free peanut butter ice cream, you can make any flavour you’d like.
The concept is important here because we all deserve a sweet treat once in a while.
Other flavours of sugar-free ice cream might be chocolate peanut butter, maple walnut, vanilla, strawberry, strawberry cheesecake, etc.
You also can use regular fluffy pancakes and make your favourite ice cream that is not keto for this recipe.
